Time 35m

Number Of Ingredients 10

1 cup peach (ripe but still firm, peeled and cubed (about 2 peaches))
1 cup mango (ripe but still firm, peeled and cubed (about 1 small mango))
1 lime
1 1/2 tbsp red onion (finely chopped)
1/4 tsp red pepper flakes
1 tbsp fresh cilantro (chopped)
pinch salt
4 small skinless boneless chicken breasts (about 5 oz / 140 grams each)
sea salt and freshly cracked pepper to taste
Olive oil spray

Steps:

  • Prepare the salsa. Combine all the ingredients in a medium bowl and toss gently. Set aside.
  • Heat a grill pan (I use one similar to this one) over high heat. Season the chicken with salt and pepper. When hot, spray lightly with olive oil and brown chicken, about 3 minutes on each side.
  • Reduce heat to medium and cook for an additional 2-4 minutes per side, or until chicken is cooked through (but still moist and juicy!). Transfer chicken on a cutting board, and using a fork to hold the chicken, slice it. Place cut chicken breasts on plates and top with salsa. Serve immediately.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients prepped and measured. This will ensure that the cooking process goes smoothly and efficiently.
  • Use Ripe Fruit: For the best flavor, use ripe mangoes and peaches for the salsa. Ripe fruit will be sweeter and more flavorful.
  • Adjust the Spice Level: The amount of chili powder and cayenne pepper in the recipe can be adjusted to your taste. If you like a milder salsa, use less; if you like a spicier salsa, use more.
  • Don't Overcook the Chicken: Chicken breasts can easily become dry and overcooked. Be careful not to cook them for too long. The internal temperature of the chicken should reach 165°F (74°C) before you remove it from the heat.
  • Let the Salsa Rest: After you make the salsa, let it rest for at least 30 minutes before serving. This will allow the flavors to meld together and develop.

Conclusion:

This Southwestern chicken with mango-peach salsa is a delicious and easy-to-make meal that is perfect for a weeknight dinner or a casual gathering. The chicken is juicy and flavorful, and the salsa is sweet, spicy, and refreshing. Serve it with your favorite sides, such as rice, beans, or tortillas.
