2 tablespoons cornstarch
1/4 cup cold water
1/4 cup shredded Mexican cheese blend
1 tablespoon minced fresh cilantro
Tortilla chips, optional

Steps:

  • In a large saucepan, combine the first six ingredients; bring to a boil. Add chicken. Reduce heat; cover and simmer for 4-6 minutes or until chicken is no longer pink. 6 cloves garlic, chopped
1 tablespoon olive oil
2 cups shredded chicken meat*
1 (15 ounce) can corn, drained
1 (15 ounce) can black beans, rinsed and drained
1 (4 ounce) can mild green chiles, chopped
1 (32 ounce) carton low-sodium chicken broth
2 (14.5 ounce) cans chopped tomatoes with Mexican spices
Tortilla chips
Chopped avocado
Sliced black olives
Shredded cheese
