This is the same recipe my grandma used to cook. Nothing fancy about it. No exotic ingredients. I updated it by using cooking spray instead of shortening but otherwise, it is the same. Just plain old down home comfort food. Sure is good with rice or mashed potatoes.

Tips:

  • Use bone-in, center-cut pork chops for the best flavor and texture.
  • Season the pork chops liberally with salt and pepper before searing.
  • Sear the pork chops in a hot skillet until they are browned on both sides. This will help to seal in the juices and prevent the pork chops from drying out.
  • Make sure to use a heavy-bottomed skillet or Dutch oven for braising the pork chops. This will help to distribute the heat evenly and prevent the pork chops from sticking.
  • Add plenty of flavorful vegetables to the braising liquid, such as onions, garlic, celery, and carrots. These vegetables will help to add flavor and depth to the sauce.
  • Simmer the pork chops in the braising liquid for at least 1 hour, or until they are cooked through. The longer you simmer the pork chops, the more tender they will become.
  • Serve the pork chops with mashed potatoes, rice, or your favorite side dish.
