When I was a kid I loved home made raisin pie, it's very rich so you can't eat a lot . This was one of my grandmothers recipes that has been around for more than 60 years.

1 1/2 c sugar
4 Tbsp flour
1 egg well beten
3 Tbsp lemon juice
2 tsp lemon rind grated
1/2 tsp salt
1 pkg raisins
2 c water
pie pastry for 2 pies

Steps:

  • 1. Mix sugar , flour, egg together. Then add lemon juice and rind, salt, raisins and water. Using a double boiler cook over hot water for 15 minutes, then cool.
  • 2. Line a pie pan with pastry, pour in the filling and place strips of pastry over the filling in a lattice design, bake in a hot over (450) for 10 minutes, then reduce heat to 350 degrees and bake 20-25 minutes longer.

1 pie crust, pre-baked
1/2 cup unsalted butter
1/2 cup sugar
3 eggs, beaten
4 teaspoons fresh lemon juice
1 teaspoon vanilla extract
1 1/2 cups sweetened flaked coconut
additional sweetened flaked coconut (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Melt butter in heavy medium saucepan over low heat.
  • Add sugar and stir until mixture is heated through.
  • Transfer to bowl.
  • Add eggs, lemon juice and vanilla and whisk to combine.
  • Stir in 1 1/2 cups coconut.
  • Pour filling into crust.
  • Bake until filling is deep golden brown and set, about 40 minutes.
  • Cool on rack.
  • (Can be made one day ahead. Cover and chill. Bring to room temperature before continuing.) Garnish with shredded coconut, if desired.
