SOUTHERN BAKED MAC AND CHEESE

Southern Baked Mac and Cheese image

This rich and decadent baked pasta is a Southern Black staple for holidays and special occasions. Steering away from the standard stovetop mac, this version includes three kinds of cheese and bakes up like a casserole with a crispy, golden top. The addition of eggs makes it similar to a cheesy, savory custard. Warning: This is not diet food!

Tips:

  • Use a good quality cheese. A sharp cheddar or a combination of cheeses will give you the best flavor.
  • Cook the macaroni al dente. This means that it should be tender but still have a little bit of a bite to it.
  • Make a roux. This is a mixture of butter and flour that will help to thicken the cheese sauce.
  • Season the cheese sauce to taste. Add salt, pepper, and any other spices that you like.
  • Don't overcook the mac and cheese. Once the cheese sauce is melted and the macaroni is heated through, it's done.
  • Top the mac and cheese with breadcrumbs or grated Parmesan cheese before baking.
