Time 30m

Yield 48 hushpuppies

Number Of Ingredients 6

2 cups self-rising white cornmeal
3/4 cup finely chopped onion
1 large jalapeno, chopped fine
Kosher salt
2 cups buttermilk
8 cups peanut oil, for frying

Steps:

  • In a large bowl, mix the cornmeal, onions, jalapeno and a pinch of salt. Add enough of the buttermilk to make a stiff batter. You may not need the whole 2 cups.
  • Heat the peanut oil in a deep fryer or a large heavy bottomed pot to 250 degrees F.
  • Drop the batter into the hot oil by teaspoonfuls. The hushpuppies will turn over in the oil as they cook. They are done when they are brown all over, 6 to 8 minutes. Tips:

  • For crispy hush puppies, use a combination of cornmeal and all-purpose flour. The cornmeal provides a coarse texture, while the flour helps bind the hush puppies together.
  • Use buttermilk instead of regular milk. Buttermilk adds a tangy flavor and helps make the hush puppies light and fluffy.
  • Add some chopped onion, green bell pepper, or jalapeño peppers to the batter for extra flavor.
  • Fry the hush puppies in hot oil until they are golden brown. Don't overcrowd the pan, or the hush puppies will not cook evenly.
  • Serve the hush puppies hot with your favorite dipping sauce, such as tartar sauce, ranch dressing, or honey butter.

Conclusion:

Southern cornmeal hush puppies are a delicious and easy-to-make side dish that can be enjoyed by people of all ages. They are perfect for picnics, potlucks, and family gatherings. With their crispy exterior and fluffy interior, hush puppies are sure to be a hit at your next party.
