Time 20m

Yield 12 serving(s)

Number Of Ingredients 8

2 cups cornmeal
1/2 cup all-purpose flour
2 tablespoons sugar
1 teaspoon salt
1 teaspoon baking soda
1 3/4 cups buttermilk
1 egg, beaten
2 tablespoons butter or 2 tablespoons margarine, melted

Steps:

  • Combine cornmeal, four, sugar, salt, and baking soda in a large bowl, mixing well.
  • Combine buttermilk, egg, and butter, mixing well.
  • Add to dry ingredients stirring just until moistened.
  • Spoon into greased muffin pans. Bake at 425 for 15 minutes or until edges begin to brown.
  • Yield is 1 dozen regular muffins or 6 Texas sized.

Tips:

  • Use fresh cornmeal for the best flavor. If you don't have fresh cornmeal, you can use store-bought cornmeal, but make sure it's finely ground.
  • Don't overmix the batter. Overmixing will make the muffins tough.
  • If you want a sweeter cornbread muffin, you can add a tablespoon or two of sugar to the batter.
  • If you want a more savory cornbread muffin, you can add a teaspoon or two of chili powder or cumin to the batter.
  • You can also add other ingredients to your cornbread muffins, such as chopped bacon, cheese, or jalapeños.
  • Bake the muffins in a preheated oven. This will help them rise evenly.
  • Let the muffins cool for a few minutes before serving. This will help them hold their shape.

Conclusion:

Southern cornbread muffins are a delicious and versatile side dish that can be served with a variety of meals. They are easy to make and can be customized to your liking. Whether you like them sweet or savory, with or without add-ins, these muffins are sure to be a hit.
