SOUTHERN SMOTHERED PORK CHOPS

Southern Smothered Pork Chops image

This is the same recipe my grandma used to cook. Nothing fancy about it. No exotic ingredients. I updated it by using cooking spray instead of shortening but otherwise, it is the same. Just plain old down home comfort food. Sure is good with rice or mashed potatoes.

Time 30m

Yield 6 serving(s)

Number Of Ingredients 8

2 tablespoons cornstarch
1 (14 1/2 ounce) can beef broth
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon salt
6 pork chops, 1/2 inch thick
2 onions, sliced
nonstick cooking spray

Steps:

  • Mix cornstarch and broth until smooth and set aside. Spray a skillet with the cooking spray and heat over medium heat.
  • Season chops with garlic powder, salt and pepper and cook chops 10 minutes or until well browned on each side. Remove chops and set aside.
  • Add the onion and cook over medium heat just until turning translucent but still crisp. Stir cornstarch mixture and add to skillet. Cook until it comes to a boil and thickens, stirring constantly.
  • Return chops to pan, cover and cook over low heat for 10-12 minutes or until the chops are done. Season with salt and pepper to taste.

Tips:

  • To achieve a crispy crust on the pork loin chops, ensure that the skillet is screaming hot before searing the chops. This will create a delicious Maillard reaction, resulting in a flavorful and golden-brown exterior.
  • For a tender and juicy pork chop, cook it to an internal temperature of 145 degrees Fahrenheit (63 degrees Celsius). Using a meat thermometer is highly recommended to ensure accurate cooking.
  • If you prefer a thicker sauce, add an extra tablespoon or two of cornstarch to the apple mixture. This will help thicken the sauce without overpowering the delicate flavors of the apples and cinnamon.
  • Feel free to adjust the amount of cinnamon and brown sugar to your taste preferences. If you prefer a sweeter sauce, add more brown sugar. For a stronger cinnamon flavor, increase the amount of cinnamon.
  • Serve the pork loin chops with your favorite sides. Mashed potatoes, roasted vegetables, or a simple green salad are all great options.
