Time 1h

Number Of Ingredients 12

2 small carrots, chopped
2 celery stalks, chopped
1/4 medium onion
1/4 cup panko (Japanese breadcrumbs)
1 large egg white
3/4 pound ground beef sirloin
Coarse salt and ground pepper
1/4 cup homemade or store-bought barbecue sauce
1 pound baking potatoes, peeled and sliced 1/2 inch thick
3/4 cup low-fat buttermilk
1 pound green beans, stem ends removed
1 teaspoon olive oil

Steps:

  • Preheat oven to 450 degrees. In a food processor, chop carrots, celery, onion, and panko with egg white until smooth, about 1 minute. Transfer to a large bowl; mix in beef, 1 teaspoon salt, and 1/8 teaspoon pepper.
  • On a foil-lined baking sheet, form meat mixture into a 6-inch-long loaf; brush with half the barbecue sauce. Bake until an instant-read thermometer inserted in loaf registers 160 degrees, 25 to 30 minutes, brushing halfway through with remaining sauce.
  • Meanwhile, in a medium saucepan, cover potatoes with cold salted water by 1 inch. Bring to a boil; reduce to a simmer, and cook until potatoes are easily pierced with a knife, 15 to 20 minutes. Drain; return to pan. Stir over medium until a starchy film forms on bottom of pan, about 1 minute. Remove from heat; mash with buttermilk until smooth. Season with salt and pepper.
  • While potatoes cook, set a steamer basket in a saucepan filled with one inch water; bring to a gentle boil. Add green beans; cover, and cook until crisp-tender, 4 to 6 minutes. Transfer to a bowl; add oil, season with salt and pepper, and toss. Serve meatloaf with mashed potatoes and green beans.

STUFFED MEATLOAF

Stuffed Meatloaf image

Create two delicious dishes in one. Reinvent the classic duo by baking fluffy mashed potatoes into the middle of meatloaf.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes     Ground Beef Recipes

Number Of Ingredients 11

1 pound Yukon gold potatoes, peeled and cut into 1/2-inch pieces
8 tablespoons (1 stick) unsalted butter, softened
1/4 cup heavy cream
2 1/2 teaspoons salt
1/2 teaspoon freshly ground plus a pinch of pepper
2 pounds ground beef
1 medium onion, finely chopped
3 tablespoons Dijon mustard
1 large egg
1/4 cup fresh bread crumbs
1/4 cup plus 2 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees. Place potatoes in a large saucepan; add enough cold water to cover by about 2 inches. Bring to a boil over medium-high heat. Cook until tender, about 20 minutes. Transfer to a colander, and drain; return potatoes to pan.
  • Mash potatoes with a fork or potato masher until light and fluffy. Add butter, cream, 1/2 teaspoon salt, and a pinch of pepper; stir until combined, and set aside.
  • Combine ground beef, onion, mustard, egg, breadcrumbs, 1/4 cup ketchup, 2 teaspoons salt, and 1/2 teaspoon pepper in a large bowl. Place half the mixture on a rimmed baking sheet, and form into an 11-by-6-inch loaf. Place 1 1/2 cups of mashed potatoes on top of meat mixture, leaving a 1-inch border. Place the remaining meat mixture on top; form into a loaf, encasing the potato mixture. Bake 30 minutes, then brush remaining 2 tablespoons ketchup over meat loaf. Continue baking meat loaf until firm to the touch, about 20 minutes more. Serve immediately.

Tips:

  • Choose the right potatoes: Yukon Gold or Russet potatoes are best for mashed potatoes because they have a fluffy texture and absorb flavor well.
  • Season the mashed potatoes well: Don't be afraid to add plenty of salt, pepper, and garlic powder to the mashed potatoes. You can also add other herbs and spices, such as rosemary, thyme, or sage.
  • Use a food mill or ricer for smooth mashed potatoes: A food mill or ricer will help you achieve a smooth and lump-free texture in your mashed potatoes.
  • Don't overcook the potatoes: Overcooked potatoes will be gummy and bland. Cook them until they are just tender when pierced with a fork.
  • Use a combination of ground beef and ground pork: This will give the meatloaf a richer flavor and texture.
  • Season the meatloaf well: Don't be afraid to add plenty of salt, pepper, garlic powder, and onion powder to the meatloaf. You can also add other herbs and spices, such as chili powder, cumin, or oregano.
  • Bake the meatloaf in a loaf pan: This will help it hold its shape and cook evenly.
  • Let the meatloaf rest before slicing: This will allow the juices to redistribute throughout the meatloaf, making it more tender and flavorful.

Conclusion:

South of the Border Mashed Potatoes and Meatloaf is a delicious and easy-to-make meal that is perfect for a weeknight dinner. The mashed potatoes are creamy and flavorful, and the meatloaf is moist and flavorful. This dish is sure to be a hit with your family and friends.
