South African Brown Pudding is a traditional steamed dessert pudding served with a sweet, boozy custard sauce. The mixture for this classic pudding is made with breadcrumbs, suet, dried fruit, molasses, and spices. A variation of the steamed sponge pudding, it can be served as a sweet main course or dessert. This recipe is served with a custard sauce made with evaporated milk, sugar, cornstarch, butter, egg yolks, vanilla, and brandy. The rich flavors of molasses and spices in the pudding complement the creamy, boozy sauce. A less boozy version can be made by omitting the brandy from the sauce. If you don't have evaporated milk on hand, you can use regular milk with 1 tablespoon of cornstarch instead of 2. The recipe also includes instructions for making a traditional boiled custard sauce, which is made with milk, sugar, eggs, vanilla, and butter.
