1 onion, thinly sliced
15 baby carrots, thinly sliced
2 stalks celery, thinly sliced
3 cloves garlic, chopped
1 (28 ounce) can tomato sauce (such as Hunt's®)
1 (8 ounce) can tomato sauce (such as Hunt's®)
1 ¼ cups chicken broth
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh oregano
salt and ground black pepper to taste
1 ½ cups heavy whipping cream

Steps:

24 -32 ounces of diced peeled tomatoes (3-4 cans)
1 (8 ounce) can tomato paste
3 garlic cloves, chopped fine
1/2-1 medium onion
2 cups water
1 large beef bouillon cube (makes 2 cups)
4 -5 fresh basil leaves
1 tablespoon italian seasoning
1 -1 1/2 cup sour cream
1 bay leaf
pepper
shredded parmesan cheese
garlic toast

Steps:

  • In a crock pot or large pot, mix water, bay leaf and bouillon until cube disolves.

Steps:

1 1/2 tablespoons plus 1/2 teaspoon kosher salt, more as needed
1 1/2 cups farro
3 large sprigs basil, stems and leaves separated
3 tablespoons extra virgin olive oil, more for drizzling
4 garlic cloves, smashed and peeled
1 large leek, white and light green parts only, halved lengthwise and thinly sliced
3 1/4 pounds ripe tomatoes, cored and cut into wedges
Black pepper, to taste

Steps:

  • Pour 8 cups cold water and 1 1/2 tablespoons salt into a pot and bring to a boil over high heat. Lower heat to medium, add the farro and basil stems, and cook until grains are tender but still a little chewy, about 25 minutes. Drain, reserving the liquid.

5 garlic cloves (chopped)
1 yellow onion (diced)
2 cups chicken stock

15 -20 fresh basil leaves (rolled and cut into a chiffonade)
salt and pepper

Steps:

  • In a heavy pot on medium high heat, pour in the olive oil and throw in the onion until translucent.
  • Add the chopped garlic and heat with the onion for about four minutes.
  • Next, add the cans of fire roasted tomatoes including the juice to the pan and cover for about 15 minute **Make sure you stir your mixture every few minutes**.
  • With the lid off the pan, add the chicken broth and heavy whipping cream and bring the pot to a simmer. The mixture should start to thicken as it reduces.   • Now it's time to get out your blender.
  • With a ladel, place the soup mixture in the blender and puree until smooth. You can do this in batches as well. Please use caution when handling the mixture and blender as it could burn your hand as you press down on the lid. I suggest using a small kitchen towel to prevent this.
  • After the soup is smooth, pour the soup back into the original pan and check for consistency.
  • Serve with a small sprinkle of the reserved bail as a garnish.

2 tablespoons unsalted butter
4 large shallots or 1 medium onion, peeled and thinly sliced
2 1/2 teaspoons salt, or to taste
3 pounds juicy, ripe tomatoes, peeled, seeded and coarsely chopped
1 pint rich chicken stock (see note)
1 pint milk
White pepper to taste
1/2 cup heavy cream, chilled
1/2 cup loosely packed fresh basil leaves, finely chopped
Small basil leaves, for garnish

Steps:

  • In a heavy, medium-size saucepan, melt the butter just until it foams. Add the shallots or onion and saute over medium heat just until wilted and very lightly colored, about seven to eight minutes.
  • Stir in two teaspoons of the salt and the tomatoes, cover tightly and cook slowly for about 12 minutes until the tomatoes are soft.
  • Transfer the mixture to the bowl of a food processor fitted with a steel chopping blade and puree until smooth. Or pass the mixture through a food mill. Return the puree to the saucepan, stir in the chicken stock and milk, season with white pepper and heat gently for a few minutes.
  • In a chilled bowl, beat the heavy cream just until it forms soft peaks. Stir in the remaining salt and the basil. Ladle the soup into bowls, add a good-size dollop of the basil cream in the middle of each bowl and place a couple of basil leaves in the center. To make a decorative design, swirl the cream outwards in a circular or sunburst pattern, using the tip of a knife or spoon handle.
