Great alternative to the typical cranberry salad served at Thanksgiving. This is a recipe that I have been making for so long that it is permanently imbedded in my memory. Very easy and delicious too.

1 (16 ounce) can jellied cranberry sauce
2 (3 ounce) packages black cherry-flavored gelatin mix (such as Jell-O®)
1 ¾ cups boiling water
1 (16 ounce) carton sour cream

Steps:

  • Mash jellied cranberry sauce in a 3-quart bowl. Stir gelatin mix thoroughly into cranberry sauce. Pour boiling water into mixture and stir until gelatin has dissolved completely, about 3 minutes.
  • Chill in refrigerator until softly set, 2 to 3 hours. Gently fold sour cream into gelatin mixture, leaving marbled streaks of sour cream and gelatin mix. Return to refrigerator until firmly set, 4 hours to overnight. Store leftovers in refrigerator.

It makes a wonderful side dish and can pass as a dessert, too. It would be good anytime you were serving a turkey, chicken or ham dish.

1 (6 ounce) box raspberry Jell-O gelatin
2 cups boiling water
1 (20 ounce) can crushed pineapple
1 (16 ounce) can whole berry cranberry sauce
1 cup chopped pecans (optional)
1 (8 ounce) package cream cheese
1 (8 ounce) container sour cream
1/2 cup sugar

Steps:

  • Mix jello with the two cups of boiling water till disolved.
  • Add the can of pineapple including the juice and the whole cranberry sauce and nuts.
  • Let set in bowl or mold of choice.
  • Blend the cream cheese, sour cream and sugar well.
  • After jello has set, spread on top.

2 small box raspberry jello
1 c sour cream
2 c boiling water
1 can(s) whole berry jellied cranberries
1 c chopped pecans

Steps:

  • 1. Boil 2 cups water. Put 1 cup in deep bowl and add can of cranberries, blend until liquid and smooth. Take other 1 cup of hot water and dissolve 2 packages of raspberry jello. Add dissolved jello to cranberry mixture, add pecans.
  • 2. Put 1/2 of mixture in either a jello mold or 8x8 dish, and chill until almost firm. Than once firm spread sour cream over the firm jello.
  • 3. Once sour cream is spread add remainder of mixture on top of the sour cream. Refrigerate until firm, and serve.

2 packages cherry or red raspberry gelatin
1-1/2 cups boiling water
15 ounces crushed pineapple (do not drain)
16 oz can whole cranberry sauce -- chunked up
1 cup sour cream

Steps:

  • Dissolve gelatin in boiling water. Stir in undrained crushed pineapple and cranberries. Chill until partially set. Spoon into 8-inch square dish. Spoon sour cream on top and stir to swirl. Chill until firm. Cut into squares to serve.

Tips:

  • Use fresh cranberries for the best flavor and texture. Frozen cranberries can also be used, but they may be slightly softer.
  • If you don't have any orange zest, you can use 1/2 teaspoon of orange extract.
  • To make the salad ahead of time, combine all of the ingredients except for the whipped cream and nuts. Cover and refrigerate for up to 24 hours. Before serving, fold in the whipped cream and nuts.
