1 stick (1/2 cup) unsalted butter, softened
1/4 cup firmly packed light brown sugar
1 large egg, beaten lightly
1 cup sour cream
1/4 cup dark molasses
1/2 cup raisins
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup miller's bran (available at natural foods stores, specialty foods shops, and some supermarkets)

Steps:

  • In a large bowl with an electric mixer cream together the butter and the brown sugar until the mixture is light and fluffy, beat in the egg, the sour cream, and the molasses, and stir in the raisins. In a bowl whisk together the flour, the baking soda, the salt, and the bran, add the mixture to the sour cream mixture, and stir the batter until it is just combined. (The batter will be lumpy.) Spoon the batter into 12 well-buttered 1/3-cup muffin tins and bake the muffins in the middle of a preheated 400°F. oven for 15 to 20 minutes, or until they are golden brown and springy to the touch. Turn the muffins out onto a rack and let them cool.

1 cup sour cream
1/4 cup butter, melted
1 egg, beaten
1 cup bran flakes (I sometimes use raisin bran)
1 cup flour
1/3 cup sugar
1 teaspoon cinnamon
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped apple

Steps:

  • preheat oven to 375. grease muffin tin.
  • Combine sour cream, butter and egg. Add bran flakes, let stand till softened.
  • Add combined dry ingredients, mixing till just moistened.
  • Fold in apples.
  • (As with most muffin recipes, you could fold in 1/2 cup chopped nuts here as well).
  • Spoon into greased muffin cups, filling cups 3/4 full.
  • Bake at 375 25 minutes.

1/4 cup light brown sugar
1 large egg, beaten lightly
1 cup sour cream

1 cup natural bran (I used Quaker brand)

Steps:

  • Cream together butter and brown sugar until the mixture is light and fluffy.
  • Beat together egg, sour cream, and molasses. Stir in the raisins.
  • In a bowl whisk together the flour, baking soda, salt, and bran.
  • Add the dry ingredients to the sour cream mixture, and stir the batter until it is just combined. (The batter will be lumpy.)

  • I baked mine 6 at a time in the toaster oven -- took 15 minutes.

4 tablespoons butter
1/3 cup brown sugar
1/4 cup granulated sugar
1 whole egg
2 egg whites
1/3 cup light sour cream
1/3 cup nonfat yogurt
1/4 cup light molasses
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup 100% all-bran cereal
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons pumpkin pie spice
1/4 teaspoon salt
1/2 cup raisins
2 cups unpeeled apples, coarsely chopped

Steps:

  • Preheat oven to 400 degrees.
  • Line muffin tin with paper cupcake liners.
  • Cream butter with both sugars in a large mixing bowl until fluffy.
  • Add egg, egg whites, sour cream, yogurt, molasses, and vanilla - mixing until well combined.
  • Add flour, bran cereal, baking powder, bakng soda, pumpkin pie spice, salt, raisins and apple pieces until just barely combined. Don't overmix - batter will be lumpy.
  • Spoon into prepared muffin tin. Bake about 15 minutes if using gem sized muffin cups or 20 minutes if using regular sized muffin cups. Tops of muffins will spring back when lightly touched.
