These are very good. They have become a staple at our house for Thanksgiving. I got the recipe from another site and made a few changes. They are quite easy and require no kneading. I have not included the overnight refrigeration time in the instructions.

Tips:

  • Activate the Yeast Properly: Ensure the water is lukewarm (around 110-115°F) to activate the yeast effectively. If the water is too hot, it can kill the yeast, while if it's too cold, the yeast will not activate properly.
  • Use Fresh Herbs: Fresh chives add a vibrant flavor to these rolls. If using dried chives, reduce the amount to 1 tablespoon.
  • Chill the Dough Before Shaping: Chilling the dough for at least 30 minutes makes it easier to handle and shape.
  • Don't Overproof the Rolls: Allow the rolls to rise until they are puffy and almost double in size, but not overly so. Overproofing can result in dense and less flavorful rolls.
  • Bake at High Temperature: Baking the rolls at a high temperature (425°F) creates a crispy exterior and a tender interior.
  • Brush with Butter: Brushing the tops of the rolls with melted butter before baking adds a golden brown color and enhances the flavor.

Conclusion:

These sour cream and chive rolls are a delightful treat that combines the tanginess of sour cream with the fresh, aromatic flavor of chives. They are perfect for serving as a side dish with soups, stews, or salads, or as a savory snack. With their soft and fluffy texture, crispy exterior, and flavorful filling, these rolls are sure to be a hit at any gathering. So, gather your ingredients, preheat your oven, and embark on a culinary journey that will tantalize your taste buds and leave you craving more!
