PUMPKIN SPICE SOFT SUGAR COOKIES

Pumpkin Spice Soft Sugar Cookies image

If a homemade pumpkin pie and a soft sugar cookie had little cookies of their own, well, let these speak for themselves. Add your favorite seasoned nuts if you wish. I happened to have had some caramelized sugar I had previously made and I crushed this up and added to the top of some of the cookies just before baking.

Tips:

  • Make sure to use fresh, ripe pumpkin purée for the best flavor and texture.
  • Be sure to cream the butter and sugar together until light and fluffy. This will help the cookies be chewy and tender.
  • Do not overmix the dough, as this will make the cookies tough.
  • Chill the dough for at least 30 minutes before baking. This will help prevent the cookies from spreading too much in the oven.
  • Bake the cookies until they are just set, but still slightly soft in the center. Overbaking will make them dry and crumbly.
  • Allow the cookies to cool completely on a wire rack before frosting or decorating.

Conclusion:

These soft pumpkin cookies are the perfect fall treat! They are easy to make and packed with flavor. With their soft, chewy texture and delicious pumpkin flavor, these cookies are sure to be a hit with everyone who tries them.
