3 cups all-purpose flour, spooned into measuring cup and leveled-off
2 teaspoons cream of tartar
1 teaspoon baking soda
½ teaspoon salt
2 sticks (1 cup) unsalted butter, softened
1½ cups plus 2 tablespoons sugar, divided
2 large eggs
1 tablespoon cinnamon

Steps:

  • Preheat the oven to 400°F. Position racks in the upper and lower thirds of the oven. Line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, cream of tartar, baking soda and salt. Set aside.
  • In the bowl of an electric mixer, beat the butter with 1½ cups of the sugar until smooth and creamy, 1 to 2 minutes. Add the eggs and beat until combined. 2 cups shortening
3/4 teaspoon vanilla
1 large egg, beaten
4 1/3 cups cake flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • Preheat oven to 375°.
  • In a medium bowl, cream together the sugars and shortening using an electric mixer.
  • Mix on slow speed 30 seconds, then scrape down the bowl with a spatula.
  • Increase speed to medium and mix for 3 minutes.
  • Slowly add vanilla and beaten egg while mixing.
