2 teaspoons vegetable oil
1 1/2 lb boneless beef top round steak, trimmed of fat
1 teaspoon salt
1/4 teaspoon pepper
1 medium onion, halved lengthwise, thinly sliced
1 medium carrot, shredded
1 can (4 oz) mushroom pieces and stems, drained
1 can (10 3/4 oz) condensed cream of mushroom soup
1 can (8 oz) tomato sauce

Steps:

  • In 10-inch skillet, heat oil over medium-high heat. Sprinkle beef with salt and pepper; place in skillet. Cook 4 to 6 minutes, turning once, until well browned.
  • Meanwhile, spray 3- to 4-quart slow cooker with cooking spray. In cooker, mix onion, carrot and mushrooms.
  • Cut browned beef into 4 pieces; place in cooker over vegetables. In same skillet, mix soup and tomato sauce. Pour over beef.

1/2 tsp salt
4 cube steaks
1/2 C flour
1 tsp pepper
4 1/2 Tb. vegetable oil
1 med. onion, diced
2 med. peppers, diced (1 red ..1 green)
14 1/2 oz can diced tomatoes
12 oz. diet coke
2 cubes beef bouillon
2 T. tomato paste

Steps:

  • Salt steaks on b oth sides. Combine flour and pepper and dredge steaks. Brown 2 steaks in 1 1/2 Tbs oil over med. heat 3 min. each side. Drain on paper towels. Repeat with remaining steaks. Saute pepper and onion in remaining oil for 7 min or until tender. Add tomatoes, coke bouillon and tomato paste. Bring to boil and cooke stirring often 5 min. until slightly thickened. Return steaks to skillet and cover and cook over low for 1 hour.
