Number Of Ingredients 18

1 pork tenderloin (1 to 1½ pounds)
3 tablespoons flour
1 teaspoon salt
1/2 tsp EACH garlic powder, onion powder, pepper, paprika
butter
olive oil
12 ounces baby bella/cremini mushrooms sliced ¼-inch thick
1 shallot, minced
4 garlic cloves, (minced)
¼ teaspoon red pepper flakes
¼ cup flour
2 ½ cups reduce sodium beef broth
1 tablespoon Worcestershire sauce
1 tablespoon reduced sodium soy sauce
1 teaspoon Dijon mustard
1 teaspoon beef bouillon ((see notes))
1 teaspoon dried parsley
½ tsp EACH dried oregano, dried thyme

Steps:

  • Prep pork: Trim silver skin from the pork tenderloin and cut crosswise into 12 medallions. Press each medallion with the palm of your hand to flatten to a about 1/2-inch even thickness. Whisk the flour and all pork seasoning together in a shallow dish. Dredge each medallion in the mixture, shake off any excess, then transfer to a dry surface.
  • Cook pork: Melt the 2 tablespoons butter in 2 tablespoons olive oil in a large skillet over medium-high heat. Once hot, add HALF of the pork medallions in a single layer and cook for approximately 3 minutes per side. Pork is cooked through when internal temperature registers at 145˚F. Cooking time will also depend on the thickness of the medallions. Transfer pork to a plate, tent with foil and repeat with remaining pork.
  • Caramelize mushrooms: Melt 2 tablespoons butter with 1 tablespoon olive oil over medium heat. Increase temperature to medium-high and add half of the mushrooms. Give them a stir to evenly coat in the butter then arrange mushrooms in a single layer. Cook mushrooms for 3 minutes per side or until golden. Once evenly browned, season mushrooms lightly with freshly cracked salt and pepper and give them a stir. Remove mushrooms from skillet and repeat with remaining mushrooms; transfer all mushrooms to a plate.
  • Gravy: To the now empty skillet, melt 2 tablespoons butter. Add shallot and sauté over medium-high heat for 2-3 minutes to soften. Reduce heat to medium, add garlic and red pepper flakes and sauté for 30 seconds. Add flour and cook for 1 minute, scraping up the browned bits on the bottom of the pan. Reduce heat to low and slowly whisk in beef broth. Add soy sauce, Worcestershire, Dijon, beef bouillon, and all seasonings. Bring to a simmer until thickened. Once thickened to desired consistency, stir the mushrooms into the gravy.
  • Assemble: Nestle the pork medallions into the pan and spoon some gravy over top. Cook over medium for a few minutes to warm through. Taste and season with salt and/or pepper to taste. Garnish with fresh parsley if desired. Serve over mashed potatoes (recommended), rice or pasta.

Time 37m

Yield 4 servings

Number Of Ingredients 10

4 (6-ounce) boneless center-cut pork medallions
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
1 tablespoon unsalted butter
2 tablespoons apple cider vinegar
1 large onion, sliced
1 cooking apple, like Rome, Gravenstein, or Golden Delicious, peeled, halved, cored, and sliced
2 tablespoons thinly sliced fresh sage leaves
1/2 cup chicken broth, homemade or low-sodium canned
1 tablespoon whole-grain mustard

Steps:

  • Heat a large heavy bottomed skillet over medium-high heat. Dry the pork medallions well and season with salt and pepper. Add the oil to the skillet and heat until shimmering. Lay the pork in the pan and cook until browned on the first side, about 4 minutes. Turn and cook until the second side is browned, about 3 minutes more. Transfer the pork to a plate, and cover loosely with foil.
  • Add the onions to the skillet, stir and season with salt and pepper. Cover, and reduce heat to medium and cook until soft, about 8 minutes. Add the cider vinegar and stir, scraping up the browned bits that cling to the skillet. Add the onions to the pork.
  • Add butter to skillet, raise heat to medium-high. Add the apples and sage; cook, stirring occasionally, until golden, about 3 minutes. Stir in the broth and mustard, and simmer until the apples soften, about 2 minutes. Return the onions and any accumulated juices from the pork to the skillet. Simmer to thicken slightly, about 2 minutes. Nestle the pork in the onions and heat until the meat is warmed through.
  • Divide the pork medallions among 4 plates and smother them with apples and onions. Serve.

SMOTHERED PORK FILET MEDALLIONS

Smothered Pork Filet Medallions image

Just like Grandma used to make! It's a great Southern dish and is best served with mashed potatoes and a green vegetable. Bon Apetit, y'all.

Categories     Pork

Number Of Ingredients 6

1 - to 2 pound pork tenderloin fillet
1 - large onion, sliced and then slice halves
3/4 - cup flour
1 - tsp. onion powder, or to taste
1 - tsp. salt, or to taste
1 - rounded half tsp. black pepper

Steps:

  • Cut the silver membrane from the fillet if there is any and remove any excess fat. With a sharp knife, cut fillet into 1/2 to 3/4 inch slices.
  • Pour flour into a large Zip Lock bag, and place 4-6 pieces of cut pork in with flour until they are all floured. Gather the top together tightly and shake the medallions well. Slice large onion in 1/8 inc. slices and then halve slices.
  • Heat 1/2 cup oil in a saute or frying pan with lid. (Bacon grease would be excellent if you keep it on hand.) Shake each piece of pork to remove excess flour and place in hot pan. Sprinkle with salt, pepper, and onion powder. Brown on one side, turn and spice the other side and brown once again. Cover with onions and enough water to almost cover the medallions. Cover with lid and cook until very tender. If gravy isn't thick enough when medallions are tender, add some cornstarch to a bit of water, make a slurry and add to pan. NOTE: You may need two saute/frying pans depending on how big the fillets are. Make sure they have lids.

Tips:

  • Choose the right cut of pork: Pork tenderloin or pork loin are the best cuts for this recipe as they are tender and cook quickly.
  • Tenderize the pork: Pounding the pork medallions with a meat mallet helps to tenderize them and makes them more receptive to the marinade.
  • Marinate the pork: Marinating the pork in a mixture of olive oil, garlic, herbs, and spices for at least 30 minutes helps to infuse it with flavor and makes it more juicy.
  • Cook the pork over medium heat: Cooking the pork over medium heat helps to prevent it from overcooking and becoming dry.
  • Use a meat thermometer: To ensure that the pork is cooked to the desired doneness, use a meat thermometer to check the internal temperature. The pork should be cooked to an internal temperature of 145 degrees Fahrenheit for medium-rare, 155 degrees Fahrenheit for medium, and 165 degrees Fahrenheit for well-done.
  • Make sure the gravy is thick and flavorful: To make sure the gravy is thick and flavorful, whisk in a cornstarch slurry (a mixture of cornstarch and water) towards the end of the cooking process. This will help to thicken the gravy and give it a glossy finish.

Conclusion:

Smothered pork medallions and gravy is a delicious and easy-to-make dish that is perfect for a weeknight dinner. The tender pork medallions are cooked in a flavorful gravy that is sure to please everyone at the table. Serve the pork medallions with your favorite sides, such as mashed potatoes, rice, or roasted vegetables, and enjoy!
