Steps:
- Prepare the pudding according to package directions ahead of time, chill in medium bowl until set. (You can use regular pudding or instant)
- Start assembling your jars with approximately 1 1/2 Tbsp of crushed graham crackers, followed by 1/12 Tbsp of pudding, followed by 1 1/2 Tbsp of Marshmallow Fluff. Repeat the process until jar is full.
- If desired toast mini marshmallows for garnish with a cooking torch.
- If you don't have a cooking torch you can pour mini marshmallows on a baking sheet.
- Set oven to "broil".
- When oven is ready place the baking sheet on the top rack closest to broiler and leave for 15 seconds. The marshmallows will toast VERY quickly, so stand close. Remove immediately and garnish, if desired.
SPICY SMOKY S'MORES BARS

- Preheat the oven to 350 degrees F. Line the bottom and sides of a 9 by 13-inch baking pan with foil. You want to leave about 4 inches of overhang on the 2 opposite sides. These are going to serve as your handles to remove the bars from the pan in 1 piece, so make sure that there is enough of the overhang for you to have a solid grip. Grease the foil well with the softened butter.
- In your food processor, grind the graham crackers into a fine meal (you need 2 cups). In a large bowl, combine your crumbs with the sugar, sea salt and melted butter. The mixture should look and feel like wet sand. Set aside a heaping 1/2 cup of the crumb mixture for the topping. Evenly press the remaining crumb mixture into the bottom the foil-lined pan. Pop your crust into the oven and bake until it is golden brown and your kitchen smells of graham crackers, 12 to 15 minutes. Remove the crust from the oven and allow it to cool on a rack or on a dishtowel on your counter.
- Melt the milk chocolate in a saucepan over low heat, stirring continuously until fully melted. Do not turn up the heat to hurry this process, you must keep it on low. Alternately, you can microwave the chocolate on low power, stirring after 2 minutes. Once the chocolate is fully melted, it's time to add the chipotle pepper powder, if using, and stir it in completely.
- Preheat the broiler.
- Pour the melted chocolate over the cooled graham cracker crust. Spread the chocolate evenly over the crust with a butter knife. Sprinkle the marshmallows over the chocolate and press them lightly into the chocolate. Sprinkle the reserved crumb mixture over and in between the marshmallows so that you cannot see the chocolate peaking through the marshmallows. Broil the bars 6 inches from the flame until the marshmallows are golden brown, 1 to 2 minutes.
- Refrigerate the bars until the chocolate is hard, 2 hours or so. Grab the ends of the foil liner and lift the bars out of the pan in 1 piece. Move to a cutting board and cut into 24 squares.
S'MORES IN A JAR
Steps:
- For the graham cracker crust: Add the graham crackers to the bowl of a food processor and pulse until the crackers are crushed in to crumbs. Add 2 tablespoons of graham cracker crumbs to each of six 5-ounce jars. Press the crumbs down to the bottoms with the back of a spoon. Reserve the remaining graham cracker crumbs.
- For the pudding: Heat the milk until hot but not boiling in a saucepan on the stove or in a heat-proof bowl in the microwave (1 minute on high). Beat the egg yolks in a medium bowl and add the hot milk, slowly at first, stirring constantly so the eggs do not scramble. Continue until all the milk is incorporated.
- Add the sugar, cornstarch and salt to a medium saucepan. Whisk until there are no lumps. Slowly whisk in the hot milk mixture in a steady stream so lumps do not form. Cook over medium-low heat, stirring constantly, until the mixture starts to bubble and has thickened, about 10 minutes. Add the semisweet and unsweetened chocolate and stir until the chocolate is melted, about 2 minutes. Remove from the heat and stir in the butter and vanilla extract. Distribute the pudding among the jars and refrigerate until fully set, 2 to 3 hours.
- For the toppings:
- Remove the jars from the refrigerator 2 hours before serving to come to room temperature. Just before serving, top the pudding with another layer of the reserved graham cracker crumbs. Add the miniature marshmallows to cover. Use a kitchen torch to brown the marshmallows. Top each S'mores in a Jar with a large piece of graham cracker.
S'MORES BARS
Steps:
- Preheat the oven to 350 degrees F. Grease an 8-by-8-inch baking dish with butter.
- In a large bowl combine the butter and brown sugar. Using a hand mixer, blend until fluffy, about 2 minutes. Add the vanilla extract and eggs and mix on medium speed until combined, about 1 minute.
- In a separate bowl combine the flour, graham cracker crumbs, baking powder and salt. With the mixer running, slowly add the dry mixture into the wet mixture, and mix until a dough forms.
- Transfer the dough to the prepared baking dish and pat out in an even layer to cover the bottom of the pan. Top the dough with the chocolate chips and marshmallows.
- Bake until the marshmallows are browned and the dough is cooked through, 20 to 25 minutes. Cool to room temperature, then slice into 2-by-2-inch squares.
PEANUT BUTTER S'MORES BARS - GIFT IN A JAR
WOW! So good! This is LOVE in a jar! hehehe Great for gift giving and a GREAT project for kids of all ages! Wonderful to do on a rainy day or ANY day. You will need to attach a card to the jar with the directions to finish the 'smores'. I like to print them out, hole punch and thread on some raffia. Tie the raffia and card around the mason jar and give as a gift!

- 1. DIRECTIONS: Place graham cracker crumbs into quart-sized canning jar. Use a meat tenderizer to pack crumbs tightly into the bottom of the jar. Place mini marshmallows against the glass on all sides of the canning jar. Press lightly to create a well in the center of the jar. Add brown sugar to the space in the center of the marshmallows pressing gently to pack. Gently add chocolate chips or M&Ms to the top of the canning jar. Seal jar with lid and sealer ring. *****Decorate jar with fabric circle, ribbon or raffia.
- 2. INSTRUCTIONS FOR TAG: Empty jar into large bowl. Remove marshmallows and combine remaining ingredients, mixing well. Snip marshmallows in half with scissors. Return to bowl; stir into dry mix. Melt 1/2 cup butter. Add melted butter, 1 teaspoon vanilla extract and 1/3 cup buttermilk to bowl. Mix well. Press lightly into greased 9-by-9 inch pan. Bake at 350 degrees for 15 minutes.
