SMOKY JALAPENO BACON CHEESEBURGERS
With the perfect amount of heat and smokiness, these may become your favorite cheeseburgers. The burger is juicy with bits of jalapeno in every bite. We love the smoky flavor from the chipotle peppers and liquid smoke. Top with your favorite cheese (we opted for pepper jack) and you have one tasty and juicy burger. Don't love...

Steps:
- 1. Seed and finely chop your jalapeno pepper.
- 2. Add ground beef and the chopped jalapeno to a bowl.
- 3. Chop the chipotle pepper. Add that plus the adobo sauce to the ground beef and jalapenos.
- 4. Add the liquid smoke, Worcestershire sauce, onion powder, and mayo to another bowl. Whisk together.
- 5. Combine all ingredients into the bowl with the ground beef and thoroughly mix with your hands.
- 6. Divide the ground beef into four sections and make your patties.
- 7. Cook the burgers however you see fit. I grilled them and finished them off in the oven to help melt the cheese. You do what you see fit. Cooking them in a cast iron skillet would be remarkable.
- 8. Don't forget to cook your bacon! Fry in a skillet. Or, I put mine in the oven at 375 for 12 to 15 minutes depending on your oven the cooking time may vary.
- 9. Once your burgers are cooked, assemble them the way you see fit.

Steps:
- In a bowl, combine ground beef and seasonings well, but don't overwork the meat! Form 2 patties out of the mixture.
- Grill burgers to your liking.
- Just before you take the burgers off the grill, top each burger with the jalapeno slices, a cheese slice, and finally 3 bacon slices. Once cheese starts to melt, remove from grill. (The cheese acts as a glue keeping everything together!).
- Put burgers on buns and enjoy! ***We like to top our burgers with sliced red onions and a big dollop of guacamole!

- Add the onion, jalapenos and garlic to the skillet and stir. Add the ground chuck and season with salt and pepper. Cook the meat, crumbling as you go, until cooked through, about 5 minutes. Stir in the tomato paste and cook for about 30 seconds.
- Add the macaroni, broth, mustard and Worcestershire sauce. Give it a big stir and bring to a simmer. Cover and cook, stirring often, until the pasta is al dente and the sauce has thickened, about 10 minutes. Stir in the Cheddar. Steps:
- Combine the ground beef, onion, egg yolk, salt, pepper, and liquid smoke in a medium bowl and mix well.
- The mixture should be soft, yet hold its shape.
- Add up to 1/2 cup bread crumbs if mixture will not come together.
- Mix with your hands-- like a man should!
- Feel free to add small amounts of any other seasonings you think would add to the flavor.
- I like to add a bit of minced garlic, seasoned salt, cayenne, etc.
- Have fun with it.
- Divide the mixture into four equal portions and form into patties that are about the diameter of the buns you'll be using.
- This should make them fairly thin and large.
- Wrap a slice of bacon around the center of each patty and secure with toothpicks.
- Chill in refrigerator at least 1 hour or up to 8 hours to chill and firm up the patties.
- Bring patties up to room temperature while preparing a hot fire in grill.
- Throw on a few water-logged mesquite wood chunks and grill the burgers to your liking, removing the toothpicks before turning over.
- While the burgers are on the grill, lightly toast the buns under the broiler or on the grill.
- Be sure you have the large hamburger buns, not those puny ones like you see in McDonald's happy meals.
- You're making man-sized burgers here!
- Place the hamburger patties, buns, tomatoes, lettuce, and anything else you want to use to build your burger, on individual plates and let each person make their own.
- These burgers go great with potato chips, macaroni salad, baked beans, and corn on the cob for a fantastic Summer meal.
- A chocolate pudding or slice of cream pie makes a great dessert.
- This recipe can be doubled or tripled or whatever to serve as many as you need.
- Enjoy!
