1/2 cup dried sweetened cranberries
1 cup red wine
2 tablespoons extra-virgin olive oil
4 slices bacon, chopped
1 red onion, thinly sliced
2 tablespoons chopped garlic
2 medium bundles red Swiss chard

Freshly grated nutmeg
1 cup turkey or chicken stock

4 teaspoons salt
2 teaspoons fennel seed
1-1/2 teaspoons pepper
1 teaspoon onion powder
1 teaspoon caraway seeds
1 teaspoon ground allspice
1/2 teaspoon garlic powder
1/2 teaspoon rubbed sage
6 pounds pork baby back ribs
SAUCE:
1-1/2 cups fresh or frozen cranberries, thawed
1-1/2 cups packed dark brown sugar
1 cup cider vinegar
1 small sweet onion, chopped
1/4 cup ketchup

  • In a spice grinder or with a mortar and pestle, combine the first nine ingredients; grind until fennel and caraway seeds are crushed.
