SMOKED SALMON IN CREAMY WHISKEY SAUCE OVER PASTA
This makes a quick yet elegant main course, with rich flavors. The mascarpone cheese can be substituted with cream, but you will need to cook it down for a few minutes after adding to reduce and achieve the proper consistency for the sauce. DO NOT leave the pistachios out, I think they are integral to the dish !

Steps:
- Heat the oil in a large frying pan and cook the garlic over a medium heat for 30 seconds.
- Pour in the champagne and cook for 2-3 minutes, or until reduced slightly.
- Add the cream and cook for 3-4 minutes, or until reduced and thickened.
- Add the remaining ingredients and pour over the pasta of your choice.
- Toss through gently and season to taste with salt and freshly ground black pepper.
Tips:
- Choose the right type of smoked salmon. Hot-smoked salmon produces a stronger flavor than cold-smoked salmon, so choose the one that you prefer.
- Don't overcook the smoked salmon. It should be flaked, not cooked through.
- Use a good quality pasta. Fresh, al dente pasta will hold up better to the sauce.
- Don't be afraid to experiment with different vegetables. This recipe calls for broccoli and peas, but you could also use asparagus, zucchini, or spinach.
- Serve the pasta sauce immediately. It's best when it's hot and fresh.
Conclusion:
Smoked salmon pasta sauce is a delicious, easy-to-make dish that's perfect for a quick weeknight meal. The combination of smoked salmon, cream, and vegetables is rich and flavorful, and the pasta cooks up in just a few minutes. This recipe is also a great way to use up leftover smoked salmon. So next time you're looking for a quick and easy meal, give smoked salmon pasta sauce a try. You won't be disappointed!
