Provided by Giada De Laurentiis

Time 15m

Yield 4 to 6 servings

Number Of Ingredients 6

1 English cucumber
Kosher salt
2 tablespoons sour cream
2 tablespoons chopped fresh dill
8 ounces smoked Irish salmon
Toasted pumpernickel bread, for serving

Steps:

  • Thinly slice the cucumber on a mandoline and place in a colander over a bowl. Season with 1/2 teaspoon salt and allow the cucumbers to sit for 5 minutes. Squeeze out the excess water and place the cucumbers in a clean medium bowl. Add the sour cream, dill and 1/4 teaspoon salt and stir with a rubber spatula to combine.
  • Lay the smoked salmon on one half of a platter lightly, so there is movement to the plate, leaving open the other half of the platter. Pile the cucumber mixture on a quarter of the platter or spoon into a bowl that fits on the platter. Serve the toasted pumpernickel bread on the other quarter of the platter.

SHRIMP AND SMOKED SALMON SMORREBROD WITH LEMON CUCUMBERS

Shrimp and Smoked Salmon Smorrebrod With Lemon Cucumbers image

My new sandwich obsession, the Danish Smorrebrod, a wonderful openface treat; this one's loaded with seafoods and fresh veggies on a slice of rye bread. This also makes a delicious appetizer, and I make extra of the cucumbers to enjoy in salads as well.

Time 30m

Yield 2 serving(s)

Number Of Ingredients 11

1/2 cucumber, peeled
1/2 teaspoon salt
1 teaspoon sugar
2 tablespoons lemon juice
4 slices rye bread (I like pumpernickel the best)
3 -4 tablespoons unsalted butter or 3 -4 tablespoons cream cheese, softened
2 radishes, thinly sliced
4 slices smoked salmon
8 shrimp, cooked, peeled and sliced lengthwise
dill, to garnish
lemon wedge, to garnish

Steps:

  • Lightly "pickle" the cucumber by finely slicing it and tossing it with the salt, sugar and lemon juice. Set aside for at least 30 minutes.
  • Meanwhile, spread the rye bread slices with the butter or cream cheese. Arrange the radish slices on top, then top with folds of smoked salmon. Drain the cucumber and layer this on top of the salmon. Top with the cooked shrimp.
  • Sprinkle fresh dill over the smorrebrod and serve with lemon wedges for squeezing. Serve 2 smorrebrod per person.

Tips for Making Smoked Salmon Cucumber Bites:

  • Choose the freshest ingredients possible. This will ensure that your smoked salmon cucumber bites taste their best.
  • Use high-quality smoked salmon. Look for smoked salmon that is firm and has a deep pink color. Avoid smoked salmon that is dry or has a fishy smell.
  • Cut the cucumber into thin slices. This will help the smoked salmon and cream cheese spread evenly on the cucumber.
  • Spread the cream cheese evenly on the cucumber slices. This will help to hold the smoked salmon in place.
  • Top the cream cheese with the smoked salmon. Be sure to press the smoked salmon down into the cream cheese so that it sticks.
  • Garnish the smoked salmon cucumber bites with chives, dill, or capers. This will add a pop of flavor and color to the dish.
  • Serve the smoked salmon cucumber bites immediately or chill them for later. These appetizers are best enjoyed within a few hours of being made.

Conclusion:

Smoked salmon cucumber bites are a delicious and easy-to-make appetizer that is perfect for any occasion. They are light, refreshing, and packed with flavor. The combination of smoked salmon, cream cheese, and cucumber is a classic, and the addition of fresh herbs and capers gives these bites a modern twist. Whether you are serving them at a party or enjoying them as a snack, smoked salmon cucumber bites are sure to be a hit.
