Steps:

  • Score an X in the bottom of 3 pounds of tomatoes and cook in boiling water for about 30 seconds. Drain, transfer to a bowl of ice water, then peel and dice. Combine the tomatoes with 1 cup granulated sugar, 1/2 cup light brown sugar and 2 tablespoons cider vinegar in a large pot over medium heat. Add 1/2 teaspoon kosher salt, 1/4 teaspoon each ground coriander and cumin and the juice of 1 lemon. Cook, stirring, until thick, about 1 hour; let cool. Serve with cheese and crackers.

Tips for Making Small-Batch Old-Fashioned Tomato Marmalade:

  • Choose ripe, flavorful tomatoes. The quality of your tomatoes will greatly impact the taste of your marmalade. Look for tomatoes that are deep red and free of blemishes.
  • Use a heavy-bottomed pot. This will help to prevent scorching and ensure that the marmalade cooks evenly.
  • Cook the marmalade over medium heat. This will help to prevent the marmalade from sticking and burning.
  • Stir the marmalade frequently. This will help to prevent the marmalade from sticking and ensure that it cooks evenly.
  • Use a candy thermometer to test the temperature of the marmalade. The marmalade is ready when it reaches a temperature of 220 degrees Fahrenheit (104 degrees Celsius).
  • Process the marmalade in a boiling water bath canner. This will help to preserve the marmalade and prevent it from spoiling.

Conclusion:

Small-batch old-fashioned tomato marmalade is a delicious and versatile condiment that can be enjoyed on a variety of foods. It is also a great way to use up extra tomatoes. With a little time and effort, you can easily make your own small-batch tomato marmalade at home.
