SLOW COOKER RANCH CHICKEN NACHOS

Slow Cooker Ranch Chicken Nachos image

I have a love/hate relationship with nachos. The love part? How can one not appreciate a giant platter of crunchy carbs topped with all the shredded meats and all the melted cheeses and spicy what nots and more crunchy do dads and cool, creamy sauces and salsas? It's a no-brainer. The hate part? My unruly lack of self control when it comes to all the things. This version is blanketed with a world of ranchy shredded chicken and green bell peppers, so there's just no way to prepare you or your mouth for what's about to happen.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all the ingredients and equipment you need. This will help you stay organized and avoid scrambling during the cooking process.
  • Choose the Right Chicken: Boneless, skinless chicken breasts or thighs are both good choices for this recipe. If you're using chicken breasts, you may need to pound them thinner so they cook evenly.
  • Don't Overcrowd the Slow Cooker: Make sure there is enough space in the slow cooker for the chicken and sauce to circulate. If the slow cooker is too crowded, the chicken will not cook evenly.
  • Use a Thermometer: The best way to ensure that the chicken is cooked through is to use a meat thermometer. Insert the thermometer into the thickest part of the chicken and cook until it reaches an internal temperature of 165°F (74°C).
  • Shred the Chicken: Once the chicken is cooked, remove it from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker and stir to combine with the sauce.
  • Assemble the Nachos: To assemble the nachos, spread a layer of tortilla chips on a large platter. Top with the shredded chicken, cheese, and your favorite toppings. Bake in the oven until the cheese is melted and bubbly.

Conclusion:

This slow cooker spicy chicken nachos recipe is an easy and delicious meal that is perfect for a party or a weeknight dinner. The chicken is tender and flavorful, and the toppings are endless. So get creative and enjoy!
