**Roast is salted and chilled for 18-24 hours BEFORE cooking. I added this time into the prep Time.** Trim all visible fat from the surface of the roast before salting. If your roast is less than 4 pounds, begin checking the internal temperature at 1 hour. Take the temperature as quickly as possible. The roast and gravy cook together for 1½ to 2 hours, for a perfect rosy medium-rare roast. Be sure to slice the roast as thin as possible to ensure tenderness.

Categories     Weeknight

Time 8h5m

Yield 6 serving(s)

Number Of Ingredients 7

2 (2 1/2 lb) boneless round steak, cut into 6 serving-size pieces
salt and pepper
2 cans mushroom pieces (do not drain)
1 package brown gravy mix
1 package onion soup mix
1 can cream of mushroom soup
1/2 cup water

Steps:

  • Season the meat with salt and pepper, layer it into the slow cooker.
  • Mix the remaining ingredients and pour over the meat.
  • Cook on low for 7-8 hours.
  • Serve with noodles or mashed potatoes.

Tips:

  • Choose the right cut of beef: Chuck roast, rump roast, or brisket are all good choices for slow cooker roast beef. These cuts are tough, but they become tender and flavorful when cooked slowly.
  • Brown the beef before cooking: Browning the beef adds flavor and helps to keep it moist. To brown the beef, heat a large skillet over medium-high heat. Add the beef and cook for 5-7 minutes per side, or until browned.
  • Use a flavorful liquid: Beef broth, red wine, or even beer can be used to add flavor to the roast beef. Choose a liquid that you enjoy the taste of, as it will be absorbed by the beef during cooking.
  • Add vegetables: Vegetables such as carrots, celery, and onions can be added to the slow cooker along with the beef. This will help to create a flavorful gravy and add some extra nutrients to the dish.
  • Cook on low and slow: The key to tender, flavorful roast beef is to cook it on low and slow. Cook the beef for 8-10 hours, or until it is fall-apart tender.
  • Make a gravy: Once the beef is cooked, you can make a gravy from the cooking liquid. Simply strain the liquid into a saucepan and bring it to a simmer. Add a cornstarch slurry (equal parts cornstarch and water) to thicken the gravy, and season to taste with salt and pepper.

Conclusion:

Slow cooker roast beef is an easy and delicious meal that can be enjoyed by the whole family. By following these tips, you can create a flavorful and tender roast beef that is sure to impress. Serve the roast beef with mashed potatoes, roasted vegetables, or your favorite side dishes.
