This comes from my 365 Easy Slow Cooker Recipes, it's very similiar to another one i found here, but there's a few differences

Provided by ShortieNJ

Categories     One Dish Meal

Time 5h5m

Yield 4-6 , 4-6 serving(s)

Number Of Ingredients 8

6 chicken breasts (boneless, skinless)
1 (15 ounce) can pineapple slices (with juice)
1/3 cup brown sugar (packed)
2 tablespoons lemon juice
1/4 teaspoon ginger (ground)
1/4 cup cornstarch
salt
cooked rice (to serve with)

Steps:

  • place chicken breasts in slow cooker, sprinkle with a little salt.
  • place pineapple slices over chicken.
  • combine pineapple juice, brown sugar, lemon juice, ginger, and cornstarch, stir until cornstarch mixes with liquids, pour over chicken.
  • cover, cook on low for 4-5 hours or on high for 2 1/2-3 hours.

Tips:

  • Prep Your Chicken: For succulent and flavorful chicken, opt for boneless, skinless chicken breasts or thighs. If using frozen chicken, ensure it's fully thawed before cooking.
  • Use Ripe Pineapple: Fresh, ripe pineapple chunks or slices provide the best flavor and texture. If using canned pineapple, choose unsweetened chunks or slices packed in their own juice.
  • Sauce Consistency: Adjust the sauce thickness to your preference. If you prefer a thicker sauce, remove the chicken and vegetables from the slow cooker and bring the sauce to a boil in a saucepan over medium heat. Simmer for a few minutes until thickened. Return the chicken and vegetables to the sauce and stir to combine.
  • Serving Suggestions: This versatile dish pairs well with various side dishes. Serve it over rice, noodles, or quinoa for a hearty meal. You can also wrap it in tortillas with your favorite toppings for a tasty wrap.
  • Storage and Leftovers: Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in a saucepan over low heat or in the microwave until warmed through.

Conclusion:

This delectable Slow Cooker Hawaiian Pineapple Chicken guarantees a flavorful and hassle-free meal that's perfect for busy weeknights or casual gatherings.
