FRESH TOMATO MARINARA SAUCE

Fresh Tomato Marinara Sauce image

A rich, flavorful sauce that is healthy. Great for use in pasta, lasagna, and other casseroles. My favorite way to eat it is to pour over raw zucchini 'pasta' for an extra-fresh and tasty meal that's very healthy, too! A great recipe for using up extra-ripe tomatoes from your garden. Double the batch and freeze half; it freezes well.

½ onion, chopped
8 large tomatoes, peeled and cut into big chunks
6 cloves garlic, minced
1 bay leaf
½ cup red wine
1 tablespoon honey
2 teaspoons dried basil

MARINARA SAUCE

Marinara Sauce image

Make classic marinara sauce at home with this easy recipe by Giada De Laurentiis from Everyday Italian on Food Network.

Provided by Giada De Laurentiis

Time 1h20m

Yield 2 quarts

Number Of Ingredients 9

1/2 cup extra-virgin olive oil
2 small onions, finely chopped
2 garlic cloves, finely chopped
2 stalks celery, finely chopped
2 carrots, peeled and finely chopped
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
2 dried bay leaves

Steps:

  • In a large casserole pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon of each salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaf. Season the sauce with more salt and pepper, to taste. (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)

Tips:

  • Use ripe, fresh tomatoes: This will give your marinara sauce the best flavor. If you can't find fresh tomatoes, you can use canned tomatoes, but make sure to drain them well and rinse them before using.
  • Roast your vegetables: Roasting the vegetables before adding them to the sauce will caramelize them and give them a deeper, richer flavor.
  • Use a variety of herbs and spices: This will give your marinara sauce a complex flavor profile. Some good options include basil, oregano, thyme, garlic, and red pepper flakes.
  • Don't overcook the sauce: Marinara sauce is best when it is simmered for a long time on low heat. This allows the flavors to meld together and develop.
  • Taste the sauce as you go: This is the best way to make sure that it is seasoned to your liking. Add more herbs, spices, or salt and pepper as needed.

Conclusion:

This slow-cooker garden-fresh marinara sauce is a delicious and easy way to use up your fresh tomatoes. It is perfect for pasta, pizza, or as a dipping sauce. With its simple ingredients and bold flavor, this sauce is sure to be a hit with your family and friends. So next time you have a bounty of fresh tomatoes, give this recipe a try!
