Tips:

  • When preparing the corn, remove the husks and silk, then cut the kernels off the cob. You can use a sharp knife or a corn stripper to make this task easier.
  • If you're using frozen corn, thaw it before adding it to the slow cooker. This will help to prevent the casserole from becoming too watery.
  • Be sure to rinse the ham before cooking it. This will help to remove any excess salt or preservatives.
  • You can use either diced or sliced ham in this recipe. If you're using diced ham, be sure to cut it into small pieces so that it cooks evenly.
  • To make the potato scallop layer, thinly slice the potatoes. You can use a mandoline slicer or a sharp knife to do this.
  • Layer the ingredients in the slow cooker in the following order: potatoes, ham, corn, and cheese. Repeat the layers until all of the ingredients have been used.
  • Cook the casserole on low for 6-8 hours, or on high for 3-4 hours. The casserole is done when the potatoes are tender and the cheese is melted and bubbly.
  • Serve the casserole hot with your favorite side dishes.

Conclusion:

This slow cooker corn, ham, and potato scallop is a delicious and easy-to-make casserole that's perfect for a weeknight meal. It's also a great dish to take to potlucks or parties. With its combination of sweet corn, savory ham, and creamy potatoes, this casserole is sure to be a hit with everyone who tries it.
