- Soak beans overnight in 4 quarts water.
- Drain.
- Combine beans, onion, green pepper, garlic, ham, oil, cumin, oregano, thyme, salt, pepper, and 3 cups of fresh water.

- Set aside half an onion and chop the rest. Heat the olive oil in a large skillet over medium-high heat.
