2 tablespoons olive oil
2 large onions (diced)
3 cloves garlic (minced)
1 red bell pepper (chopped)
1 green bell pepper (chopped)
3 (14-ounce) cans diced tomatoes (undrained)
2 cups vegetable broth
2 teaspoons cumin
1 tablespoon chili powder
1/2 teaspoon crushed red pepper flakes
1 (10-ounce) package frozen corn
2 (15-ounce) cans black beans (drained and rinsed)
To Serve: sour cream, shredded cheese, chopped green onion, cilantro, limes

Steps:

  • Gather the ingredients.

2 red bell peppers, seeded and chopped

1/4 cup chili powder

6 cups water
4 cups low sodium chicken broth

1 1/2 lbs dried black beans, rinsed and picked over
1 boneless ham, 1 to 1 1/2 pounds
1 (28 ounce) can diced tomatoes
1 (15 1/2 ounce) can black beans, drained and rinsed
3 tablespoons fresh lime juice (2 limes)

Steps:

  • 1. Cook bacon in Dutch oven over medium heat until crisp, about 8 minutes. Transfer bacon to paper towel-lined plate. Cook onions, peppers, and jalapeños in bacon fat until softened, about 8 minutes. Transfer half of sautéed vegetables to medium bowl, wrap with plastic, and reserve in refrigerator. 4 cups chicken broth
1 (14 ounce) can diced tomatoes in juice
2 carrots, peeled and finely chopped
