Categories     Main Course

Time 3h20m

Number Of Ingredients 14

1 tablespoon extra-virgin olive oil
2 pounds boneless skinless chicken breasts (or thighs)
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
1 jar roasted red peppers ((12 ounces), drained and chopped)
1 cup kalamata olives (drained)
1 medium red onion (cut into 1/2-inch chunks)
3 tablespoons red wine vinegar
1 tablespoon minced garlic (from about 3 large cloves)
1 teaspoon honey
1 teaspoon dried oregano
1 teaspoon dried thyme leaves
1/2 cup feta cheese (optional for serving)
Chopped fresh herbs: any mix of basil (parsley, or thyme, optional for serving (I used fresh thyme))

Steps:

  • Lightly coat a 5-quart or larger slow cooker with nonstick spray. Heat the oil in a large skillet over medium high. Sprinkle the chicken with salt and pepper, then place it in the hot pan, seasoned side down. Let brown on the first side for 1 to 2 minutes until golden, then flip and brown on the other side for 1 additional minute. If your skillet isn't large enough to fit all of the chicken pieces, work in batches so that the chicken does not overlap. Transfer the chicken to the slow cooker.
  • Arrange the peppers, olives, and onions around the chicken (do not place on top).
  • In a small bowl or measuring cup, whisk together the red wine vinegar, garlic, honey, oregano, and thyme. Pour over the chicken and vegetables. Cover and cook for 1 1/2 to 2 hours on high or 3 to 4 hours on low, until the chicken is cooked through and the center reaches 165 degrees F. Serve warm, sprinkled with feta and fresh herbs.

SLOW COOKER GREEK CHICKEN

Slow Cooker Greek Chicken image

Recipe by chef Sarah Moulton, published in local paper. I have not made this but think it has potential, as it uses chicken thighs and has a shorter cook cycle. I would likely keep the potatoes in larger pieces, they seem too thinly sliced, but time will tell.

Categories     Lunch/Snacks

Time 5h5m

Yield 6 serving(s)

Number Of Ingredients 14

1 1/2 lbs yukon gold potatoes, sliced 1/4 inch thick
3 tablespoons olive oil, divided
kosher salt
3 lbs bone-in skin-on chicken thighs
ground black pepper
2 tablespoons all-purpose flour
1 cup thinly sliced yellow onion
1 tablespoon minced garlic
1/4 cup dry white wine
1 cup chopped pepperoncini pepper
1 cup pitted kalamata olive
1 lemon, cut into 8 wedges
2 tablespoons chopped fresh rosemary
1/2 cup low sodium chicken broth

Steps:

  • In a large slow cooker (6 qt), toss the potatoes with 1 tbl. of the oil and 1/2 teaspoons salt. Season the chicken on all sides with salt and pepper.
  • Heat the remaining 2 tbl. oil in a large skillet over medium-high heat. Flour half the chicken, shaking off excess, and add to skillet skin-side down. Cook until nicely browned on both sides, 8 to 10 minutes. Transfer to slow cooker, placing skin side up on top of the potatoes. Repeat with remaining chicken.
  • Pour off all but 2 tbl. of fat in the skillet, then return it to medium heat. Add the onion and cook, stirring occasionally, until golden, about 8 minutes. Add the garlic, and cook, stirring, for one minutes. Transfer the mixture to the slow cooker.
  • Return the skillet to high heat and add the wine, stirring and scraping to deglaze. Simmer until the wine is reduced by half, then add to the slow cooker.
  • Add the remaining ingredients, tucking them among the chicken thighs. Cover and cook on LOW for 4 1/2 hours or high for 2 1/2 hours.

Tips:

  • Use bone-in, skin-on chicken thighs: These are more flavorful and juicy than boneless, skinless chicken breasts.
  • Don't overcrowd the slow cooker: The chicken should be in a single layer at the bottom of the cooker.
  • Use a variety of vegetables: This will add flavor and color to the dish.
  • Add some herbs and spices: This will help to flavor the chicken and vegetables.
  • Cook on low for 6-8 hours or on high for 3-4 hours: The chicken is done when it is cooked through and the vegetables are tender.
  • Serve over rice or pasta: This will help to soak up the delicious sauce.

Conclusion:

This slow-cooked Greek chicken dinner is a flavorful and easy-to-make meal that is perfect for a weeknight dinner. The chicken is cooked in a delicious sauce made with tomatoes, olives, and feta cheese. The vegetables are tender and flavorful, and the rice or pasta is a perfect accompaniment. This dish is sure to please everyone at the table.
