2 Tablespoons olive oil
2 lbs elk steak (cubed)
1 cup beef broth
2 lbs red potatoes (cubed)
1 large onion (diced)
1/2 lb carrots (diced)
1 jalapeño (diced)
1 bell pepper (diced)
1 can green beans ((15 oz))
1 can diced tomatoes ((15 oz))
6 cloves garlic (sliced)
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon basil
1 teaspoon rosemary
2 teaspoons salt
teaspoon black pepper
2 bay leaves
1 cup water

Steps:

  • Heat olive oil in large skillet over med-high heat. When oil is hot, add meat.
  • Let meat brown well, stir every 2-3 min. Let meat fry for 7-8 minutes. Place meat in crockpot.
  • Place skillet back over heat, and add broth. Stir and scrape the browned bits, and bring the broth to a boil. When it boils, remove from heat and pour broth into the crockpot with the meat.
  • Add onions, garlic, tomatoes, spices and bay leaves to crockpot. Cover and cook on high for 2 hours.
  • After meat has cooked for two hours, add potatoes, jalapeño, carrots, bell pepper, green beans, and water. Continue cooking on high for 3 more hours.
  • Stir and serve.

1 (3-pound) boneless chuck or round elk roast, trimmed of extra fat
1 teaspoon salt, divided
1 teaspoon black pepper, divided
1 (14-ounce) can fat-free beef broth
4 cups carrots, cut into 1/2-inch rounds
3 cups onion, roughly chopped
2 cups mushrooms, sliced
1 cup celery, cut into 1/2-inch pieces
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
2 sprigs fresh thyme
1 teaspoon chopped garlic
2 tablespoons cornstarch

Steps:

  • Coat a large skillet with nonstick spray and bring to high heat. Season roast with 1/4 teaspoon each salt and pepper. Cook and rotate until all sides are browned, about 5 minutes. Place in a slow cooker. Add all remaining ingredients except cornstarch, including 3/4 teaspoon each salt and pepper. Gently stir. Cook on high for 3 to 4 hours or on low for 7 to 8 hours, until roast is cooked through. Turn off slow cooker. In a small bowl, dissolve cornstarch in 2 tablespoons cold water. 1 can (15 ounces) tomato sauce
1/2 cup red wine or beef broth

1 can (2-1/4 ounces) sliced ripe olives, drained
1 cup sliced fresh mushrooms

1-1/2 pounds beef top round steak
2 tablespoons canola oil
1 cup chopped onion
1/4 cup reduced-sodium soy sauce
1 garlic clove, minced
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon pepper
4 medium tomatoes, cut into wedges or 1 can (14-1/2 ounces) diced tomatoes, undrained
1 large green pepper, cut into strips
1 tablespoon cornstarch
1/2 cup cold water
Hot cooked noodles or rice

garlic powder to taste
3 tablespoons vegetable oil
1 cube beef bouillon
¼ cup hot water
1 tablespoon cornstarch

1 (14.5 ounce) can stewed tomatoes, with liquid
3 tablespoons soy sauce

This is my brother Bob's recipe. I've always been loathe to eat food made with Bambi, but I couldn't resist the smell of this. Know what? It was delicious! He brings this out at football watching parties, but denies it's venison until after the taste test. Serve with rice or noodles.

2 ½ tablespoons beef broth
2 ½ tablespoons dry sherry
4 teaspoons soy sauce
1 teaspoon salt
¼ teaspoon ground white pepper
1 pound lean venison, cut into thin strips
1 teaspoon sugar-based curing mixture (such as Morton® Tender Quick®)
2 teaspoons steak seasoning
1 onion, halved and sliced
3 bell peppers, sliced into thin strips
2 tablespoons vegetable oil
1 tablespoon cornstarch

Steps:

  • In a medium bowl, stir together the beef broth, sherry, soy sauce, salt and pepper. Season the meat with curing salt and steak seasoning, then place it in the bowl with the marinade. Cover and refrigerate for 2 to 3 hours.
  • Heat one tablespoon of oil in a large skillet over medium-high heat. Use tongs or a slotted spoon to transfer the venison to the skillet, reserving the marinade. Cook and stir until browned and cooked through, 3 to 5 minutes, depending on the size of your pieces. Remove to a clean bowl.
  • Heat the remaining tablespoon of oil in the same skillet over medium-high heat. Add the onion and bell pepper strips; cook and stir until starting to become tender, 2 to 3 minutes. Remove them from the pan and place them in the bowl with the meat.
  • Dissolve the cornstarch in 2 tablespoons of the reserved marinade. Pour the rest of the marinade into the skillet. Bring to a boil, then simmer over medium heat for a minute. Stir in the cornstarch slurry and continue to cook, stirring slowly until thickened, about 1 minute. Return the meat and vegetables to the skillet and stir until coated with the sauce. Transfer to a serving dish.

  • To save time, use pre-cut elk steak or stew meat.
  • If you don't have a slow cooker, you can also cook this dish in a Dutch oven over low heat for 8-10 hours.
  • For a thicker sauce, add a cornstarch slurry (equal parts cornstarch and water) to the slow cooker in the last 30 minutes of cooking.
