CHURCH SUPPER SLOPPY JOES FOR 60

Sloppy Joe Recipe For Large Crowd, Church Cookbook Recipe.

Provided by Lea Ann Brown

Categories     Main Course Beef

Number Of Ingredients 10

8 pounds ground beef (extra lean)
1/3 cup flour
2 1/2 cups celery (diced)
2 1/2 cups onion (diced, about 2 medium onions)
1/2 cup mustard (or more to taste)
1/2 cup vinegar
1/2 cup brown sugar (light brown, or dark brown)
28 ounces catsup (3 1/2 cups)
2 cups water
60 Hamburger buns (small ones, but not slider buns)

Steps:

  • In a very large fry pan, brown hamburger meat in three batches. Once the first batch is about half way browned, add 1/3 of the onion, 1/3 of the celery and 1/3 of the flour. Once the meat is browned, move the mixture to a big soup pot and repeat with two more batches.
  • Use an 8 quart soup pot. I have used a 6 quart, it works but a little tight on space.
  • Once all of the ingredients are in the big soup pot, add remainder of the ingredients and simmer for at least 30 minutes. If the mixture seems dry, or needs a little punch of flavor, I add a little bit of your favorite bottled bbq sauce.
  • Adjust seasonings to taste and serve on hamburger buns.

My mother-in-law created this recipe in the early 1950s. She prepared it many, many times before she was happy with the end result. Our family likes these satisfying sandwiches served with pickles and potato chips. -Sharon McKee, Denton, Texas

These are really great! I have made them several times and frozen them in quart-sized bags. If you are making them for a group you can keep them warm in a large crock pot. Makes enough for 100 sandwiches. The original source is from Taste of Home Annual Recipes 1994.

CROCK POT SLOPPY JOES FOR A CROWD

Crock Pot Sloppy Joes for a Crowd image

I made these for a potluck at work and they were a definite hit! One thing I didn't put in the recipe: instead of using 1 bell pepper, I usually use 1/2 cup of tri-pepper mix. It's just red, yellow and green bell peppers, already diced. Publix sells it in their produce section. It's a real time saver!

Time 6h20m

Yield 15 serving(s)

Number Of Ingredients 16

3 lbs ground chuck
1 large vidalia onion, diced
4 stalks celery, diced
1 large bell pepper, diced
2 garlic cloves, minced
24 ounces tomato sauce
1 cup catsup
3/4 cup mild barbecue sauce
3 tablespoons light brown sugar
3 tablespoons Worcestershire sauce
3 tablespoons white vinegar
1 tablespoon beef bouillon granules
3 teaspoons dry mustard
1 teaspoon soy sauce
1 teaspoon Mrs Dash southwest chipotle seasoning mix
1/2 teaspoon nutmeg

Steps:

  • Brown the hamburger with the onions, garlic and peppers until the meat is cooked and the onions are clear.
  • Drain well (I just leave mine in the colander draining while I prepare the sauce).
  • In the crock pot, whisk together all the remaining ingredients.
  • Fold in the hamburger mixture. Stir to coat.
  • Cook on low for 5-6 hours.

Tips:

  • Use a variety of ground meats. This will give your sloppy joes more flavor and texture. Ground beef, pork, and turkey are all good options.
  • Don't overcook the meat. Overcooked meat will be tough and dry. Cook it until it is just browned.
  • Use a flavorful sauce. The sauce is what really makes sloppy joes special. Use a sauce that is tangy, sweet, and slightly spicy.
  • Add some vegetables. Vegetables will add nutrients and flavor to your sloppy joes. Try adding onions, peppers, or celery.
  • Serve sloppy joes on a bun. Sloppy joes are traditionally served on a bun, but you can also serve them on a slider bun or even a piece of bread.

Conclusion:

Sloppy joes are a delicious and easy-to-make meal that is perfect for a crowd. With a few simple tips, you can make sloppy joes that are sure to be a hit. So next time you're looking for a quick and easy meal, give sloppy joes a try.
