Tips:
- Choose thin sliced chicken breasts: This will help ensure even cooking and prevent the chicken from drying out.
- Don't overcrowd the pan: If you're cooking a lot of chicken, cook it in batches to avoid steaming.
- Use a well-seasoned cast iron skillet: This will help create a nice crust on the chicken.
- Don't overcook the chicken: Chicken is best when it is cooked through but still juicy. Overcooked chicken will be dry and tough.
- Use fresh lemon juice: Fresh lemon juice will brighten up the flavor of the dish.
- Don't skimp on the pistachios: Pistachios add a nice crunch and nutty flavor to the dish.
- Serve over a bed of greens: This will add a fresh, healthy element to the dish.
Conclusion:
This sliced lemon pistachio chicken over greens is a delicious and healthy meal that is perfect for a quick weeknight dinner. The chicken is juicy and flavorful, the pistachios add a nice crunch, and the lemon juice brightens up the flavor of the dish. Served over a bed of greens, this dish is sure to be a hit with the whole family. It's also a great way to use up leftover chicken.
