Yield Serves 4

For the onion marinade:
1/2 medium yellow onion, coarsely chopped
1 small garlic clove, peeled
1/4 cup plus 1 tablespoon extra-virgin olive oil
1 tablespoons water
For the skirt steak:
2 pounds skirt steak, silver skin trimmed away
1 teaspoon kosher salt
1⁄4 teaspoon freshly ground black pepper
Smoked sea salt, for finishing
Ox's Chimichurri, for serving (optional)

Steps:

  • Make the onion marinade:
  • Combine the onion, garlic, 1/4 cup of the oil, and water in a blender; blend until smooth. Put the skirt steak in a large resealable plastic bag or baking dish and pour in the onion mixture, coating both sides. Cover or wrap the meat well so the onion scent does not permeate your refrigerator; chill for at least 4 hours and up to 24 hours.
  • To make the skirt steak:
  • Prepare a grill to medium-high heat.
  • Remove the steak from the marinade and season both sides with the kosher salt and pepper. Transfer the meat to the grill and let cook until one side is well seared, 3 minutes. Flip and cook for 2 minutes more, for rare to medium-rare. At this point, remove the steak from the grill and let rest for 2 minutes to allow the carryover heat to give it a more even doneness. Finally, return the steak to the grill and cook for 1 minute more per side (this guarantees this thin cut of steak will be served hot). (Add another minute of cooking on the second side for medium doneness.) Remove the skirt steak from the grill and let rest 1 to 2 minutes before slicing and serving.
  • Cut each steak with the grain into three sections. Turn each piece to slice against the grain at a 45-degree angle. Slice into 1/4-inch pieces on a slight bias against the grain. You should get about 5 slices per cut piece, about 15 slices total. Transfer the meat to a warmed plate. Garnish with the remaining 1 tablespoon oil and smoked sea salt and serve with the chimichurri.

GRILLED SKIRT STEAK WITH HOMEMADE ASIAN BARBEQUE MARINADE

Grilled Skirt Steak with Homemade Asian Barbeque Marinade image

The problem with bottled sauces and marinades is that the only words you recognize on the ingredients list are 'high fructose corn syrup,' and 'dehydrated garlic.' Hopefully, you will see just how simple this sauce is to make. Not only is it MSG-free, but the flavor is far superior to any of those supermarket bottles.

CHURRASCO SKIRT STEAK CUBAN-STYLE WITH MARINADE RECIPE RECIPE - (5/5)

Churrasco Skirt Steak Cuban-Style with Marinade Recipe Recipe - (5/5) image

Provided by kbartell

Number Of Ingredients 19

Beef skirt steak cut in long steaks (about 3/4 pound per person or more)
Cuban Churrasco (Mojo) Marinade
3 heads garlic -- about 30 to 40 cloves
2 teaspoons salt
1 teaspoon black peppercorns
1 and 1/2 cups sour orange juice
(If you can't get sour orange juice in your area, use two parts orange to one part lemon and one part lime)
1 cup minced onion
2 teaspoons oregano
1 cup Spanish olive oil
Cuban Chimichurri Sauce
1 large bunch of cilantro leaves
8 cloves garlic
1/4 cup vinegar
Juice of one lime
2/3 cup olive oil
1/2 cup onion
Dash or two of red pepper flakes
Salt and Pepper to taste

Steps:

  • Mojo Marinade To make the marinade: Mash garlic, salt, and peppercorns into a paste, using a mortar and pestle. Stir in sour orange juice, onion, and oregano. Let sit at room temperature for 30 minutes or longer. Whisk the garlic-orange juice mixture with the olive oil until well blended. Preparing the Meat Preparing the meat is very easy. Place the meat in a large bowl or pan. Add enough mojo marinade to cover the meat. Place a cover over the bowl or pan and place in the refrigerator a minimum of five hours, but preferably overnight. Chimichurri Sauce While your meat is marinating, make the sauce. We like to make it the easy way. Put everything except the olive oil in a blender and using the "chop" setting, click on and off until you have a thick mixture. Do not over process! This is the kind of dish you need to taste and adjust so that you get just the right flavor! So taste it! (The best way to taste it is with a piece of bread.) Whisk in the olive oil. (If you use the blender to incorporate the oil, the oil and liquids will emulsify, giving your chimichurri a white, paste-like texture.) Add salt, pepper, more vinegar and lime juice as needed. The flavor should be very intense with garlic and cilantro. Don't be stingy with the salt either! Grilling the Meat Grill the marinated steaks outdoors on the barbecue. (Make sure your coals are hot and white!) You can cook them however you like your steak -- from rare to well done. However, the rarer the meat, the more tender and flavorful! Serve the meat with the chimichurri sauce -- it tastes great!

SKIRT STEAK WITH SOY AND GINGER MARINADE

SKIRT STEAK WITH SOY AND GINGER MARINADE image

Categories     Beef     Grill/Barbecue

Yield 6 people

Number Of Ingredients 9

Marinade:
6 garlic cloves, chopped
3 oz (about 2/3 cup) fresh ginger, peeled and chopped
1/4 cup soy sauce
1/4 cup dry sherry
1/4 cup rice wine vinegar
1/4 cup olive oil
2 T sesame oil
3 lb skirt steak trimmed of fat, or flank steak

Steps:

  • Combine marinade ingredients, and marinate the steaks for at least one hour at room temperature, or 8 hours chilled. Light the grill and allow to preheat for 15 minutes. Scrape the ginger and garlic from the steaks and pat dry. Grill to desired doneness. Remove from the heat and let it rest for about 10 minutes, lossely covered. Cut on the diagonal in thin slices.

Tips:

  • Choose the right cut of meat: Skirt steak is a thin, flavorful cut of beef that is best marinated before cooking. Look for skirt steak that is about 1 inch thick and has a good amount of marbling.
  • Make a flavorful marinade: The marinade is what will give your skirt steak its flavor, so it's important to use a good recipe. This recipe uses a combination of olive oil, soy sauce, Worcestershire sauce, garlic, and spices to create a flavorful marinade that will tenderize the meat.
  • Marinate the steak for at least 30 minutes: The longer you marinate the steak, the more flavorful it will be. If you're short on time, you can marinate the steak for as little as 30 minutes, but for best results, marinate it for at least an hour or two.
  • Cook the steak over high heat: Skirt steak is a thin cut of meat, so it cooks quickly. Cook it over high heat for a few minutes per side, or until it reaches your desired doneness. Be careful not to overcook the steak, or it will become tough.
  • Let the steak rest before slicing: After cooking the steak, let it rest for a few minutes before slicing. This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.

Conclusion:

Skirt steak is a delicious and versatile cut of beef that can be cooked in a variety of ways. This recipe for skirt steak marinade is a great way to add flavor and tenderness to your skirt steak. Whether you're grilling, pan-frying, or broiling your skirt steak, this marinade will help you create a delicious and memorable meal.
