3 green onions (chopped)
3 tablespoons soy sauce ((or more to taste))
salt and pepper ((to taste))
2 teaspoons oyster sauce
2 tablespoons toasted sesame seeds
2 tablespoons chopped green onions

Steps:

  • Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the egg and cook until scrambled. Once cooked, transfer the egg to a separate plate.

1 Carrot (cut into small, bite-sized pieces)
1/4 of a small Cabbage (chopped small)
4 Spring Onions (roughly chopped small)
8 ounces Bean Sprouts
15 fresh Shiitake Mushrooms (sliced small)
1/3 cup Water
Benihana Yakisoba Sauce (Recipe below)
Pickled Ginger (to taste)
Ao Nori (to taste)

Steps:

  • Prepare Benihana Yakisoba Sauce according to recipe below. Set aside.
  • Boil Yakisoba noodles according to package instructions. Set aside and keep warm.
  • In a large pan, heat oil over medium high heat.
  • Add cabbage, carrot, onion and mushrooms. Sauté until onions turn translucent.
  • Add yakisoba noodles. Stir-fry 1 minute.
  • Pour water into pan and cover with a lid. Allow the noodles to steam for a few minutes.

8 ounces udon noodles
1 tablespoon unsalted butter, softened
1 garlic clove, minced
2 tablespoons vegetable oil, divided
1/2 lb shrimp, peeled and deveined (or whatever protein you like)
1/2 lemon, juiced
8 ounces shiitake mushrooms
1 zucchini, cut in half length wise and then sliced
2 green onions, finely chopped
3 tablespoons soy sauce
1 teaspoon sesame oil
1/4 cup chicken stock

Steps:

  • Prepare udon noodles as directed on package. Drain and rinse under cold water. Set aside.
  • Combine softened butter and minced garlic in a small bowl, set aside.
  • In a large skillet heat 1 Tbsp of vegetable oil over medium high heat. Add shrimp and sauté one minute per side. Add garlic butter and lemon juice, sauté for one more minute until butter melts and shrimp is pink, ant then remove into a bowl and set aside.
  • Add remaining 1 Tbsp of vegetable oil to skillet and then add the mushrooms, zucchini and green onions. Saute for 5-7 minutes, until vegetables begin to carmelize.
  • Put shrimp and udon noodles back in skillet with vegetables, and add chicken stock, soy sauce and sesame oil. Toss with tongs to combine. Serve warm with optional toppings (hot sauce, sesame seeds).

You don't need a wok to make this just a large skillet --- this recipe will feed 2-3 people but can be doubled easily and all amounts may be adjusted to taste --- if you prepare the chicken and broccoli florets ahead of time this recipe takes little time to prepare, I sometimes add in matchstick-size carrots also, the red pepper flakes may be adjusted to suit heat level, my family likes extreme spice so add in lots! :)
