BRAISED RED CABBAGE WITH APPLES

Braised Red Cabbage With Apples image

This is an adaptation of a classic cabbage dish that I never tire of. The cabbage cooks for a long time, until it is very tender and sweet. I like to serve this with bulgur, or as a side dish with just about anything. You can halve the quantities if you don't want to make such a large amount.

Provided by Martha Rose Shulman

Categories     easy, one pot, side dish

Time 1h15m

Yield 6 to 8 servings

Number Of Ingredients 8

1 large red cabbage, 2 to 2 1/2 pounds, quartered, cored and cut crosswise in thin strips
2 tablespoons canola oil
1 small onion, thinly sliced
2 tart apples, such as Braeburn or granny smith, peeled, cored and sliced
About 1/3 cup balsamic vinegar
1/4 teaspoon ground allspice
Salt
freshly ground pepper to taste

Steps:

  • Prepare the cabbage, and cover with cold water while you prepare the remaining ingredients. Heat the oil over medium heat in a large, lidded skillet or casserole, and add the onion. Cook, stirring, until just about tender, about three minutes. Add 2 tablespoons of the balsamic vinegar and cook, stirring, until the mixture is golden, about three minutes, then add the apples and stir for two to three minutes.
  • Drain the cabbage and add to the pot. Toss to coat thoroughly, then stir in the allspice, another 2 tablespoons balsamic vinegar, and salt to taste. Toss together. Cover the pot, and cook over low heat for one hour, stirring from time to time. Add freshly ground pepper, taste and adjust salt, and add another tablespoon or two of balsamic vinegar as desired.

SAUERKRAUT AND APPLES

Sauerkraut and Apples image

In the Chesapeake, seafood often finds its way onto the Thanksgiving menu. But in Baltimore, which has a strong eastern European and German immigrant history, the holiday table demands something else. "The absence of sauerkraut when turkey is present, Thanksgiving included, is unthinkable, comparable to potatoes without gravy or crisp French fries without ketchup," wrote John Shields, the chef and owner of Gertrude's restaurant in Baltimore, in his cookbook "Chesapeake Bay Cooking." (Sauerkraut is a mainstay well beyond Thanksgiving; Gertrude's hosts an annual Krautfest in January.) Traditionally, homemakers fermented the cabbage in earthenware crocks in their cellars, but these days the fresh stuff is available to buy. On Thanksgiving, it's often simply served as a side, or incorporated into dishes like this, in which the sauerkraut is braised in beer with bacon and apples.

Time 55m

Yield 8 servings

Number Of Ingredients 8

6 tablespoons butter
4 slices bacon, cut into 1/2-inch pieces
1 small onion, thinly sliced
3 tart apples, such as Stayman, Pippin, Granny Smith or Jonagold, peeled, cored, and thinly sliced
2 pounds sauerkraut, drained and rinsed
1 bottle (12 ounces) beer (you may substitute apple cider)
Black pepper, to taste
1/2 teaspoon caraway seeds

Steps:

  • Melt butter in a large heavy pot over medium-high heat. Add bacon and cook, stirring often, until fat has started to render, about 5 minutes.
  • Toss onion and apples in the fat and cook, stirring occasionally, until onions begin to soften, about 3 minutes. Stir in sauerkraut.
  • Add beer and season with pepper and caraway seeds. Bring mixture to a boil, then cover the pot. Reduce heat so mixture is just simmering and cook for 45 minutes. Or transfer the covered pot to a 350-degree oven and bake for 1 hour. Stir and serve hot.

SKILLET-FRIED BALSAMIC APPLES AND SWEET ONION

SKILLET-FRIED BALSAMIC APPLES AND SWEET ONION image

Categories     Salad     Fruit     Side     Sauté

Yield 4 servings

Number Of Ingredients 5

3 tablespoons butter
2 large sweet onions, sliced
5 large Granny Smith apples, peeled and sliced (about 2 1/4 lb.)
2/3 cup firmly packed light brown sugar
1/4 cup balsamic vinegar

Steps:

  • Melt butter in a large skillet over medium-high heat; add onions, and sauté 5 minutes. Add apples, brown sugar, and balsamic vinegar, and sauté 15 to 20 minutes or until apples are tender.

Tips:

  • To ensure even cooking, slice the apples and onions thinly and uniformly. Thicker slices may require longer cooking time and may not caramelize properly.
  • Use a large skillet to prevent overcrowding. Overcrowding can hinder caramelization and result in steamed rather than seared apples and onions.
  • Cook the apples and onions over medium heat and resist the urge to stir frequently. Allow them to develop a golden-brown crust before flipping. This caramelization process brings out the natural sweetness of the ingredients.
  • To achieve a balance of flavors, use a combination of sweet and tart apples. Granny Smith, Honeycrisp, and Pink Lady are popular choices for their contrasting flavors.
  • Add a drizzle of balsamic vinegar towards the end of cooking to enhance the sweetness of the apples and onions. The balsamic vinegar adds a touch of tanginess and depth of flavor.
  • Garnish the finished dish with fresh herbs like thyme or rosemary to add an extra layer of flavor and visual appeal.

Conclusion:

Skillet-fried balsamic apples and sweet onions offer a delightful combination of sweet, tangy, and caramelized flavors. With their ease of preparation and minimal ingredients, they make a versatile side dish or topping for various main courses. Whether served alongside roasted meats, grilled fish, or as a topping for salads or pizzas, these skillet-fried apples and onions add a touch of elegance and culinary expertise to any meal. Their vibrant colors and enticing aromas make them a feast for the eyes and the taste buds, leaving a lasting impression on your palate. So, embrace the simplicity and flavors of this classic dish, and enjoy the culinary journey that awaits you.
