Marinade meat of your choice in lemon or wine (white wine if chicken or fish and red wine for pork, beef or lamb), salt, pepper and garlic. Put on skewers with veggies or even fruits that you like such as pineapple, kumquat or lychees!

FOR THE GRILL:
- 500 g chicken breast
- 2 large red peppers
- 2 large red onions
- 2 large courgettes
- 200 g button mushrooms
- 5 turkish peppers
FOR THE MEAT MARINADE:
- 1/2 lemon
- 2 tbps olive oil
- 1 tbps sea salt or himalayan salt
- 1/2 tbps ground pepper black, freshly ground
- 1 large garlic clove
- 1 tbps dry herbs optional

Steps:

  • The marinade & grill: 1. Prepare the marinade by mixing the finely chopped garlic, salt, pepper, olive oil and the herbs if you fancy.
  • Cut the chicken breast into chunks of about a square 1 inch and marinade ideally for about 3-4 hours so best is to prepare the meat in advance, even the night before.
  • Chop all the veggies into the desired size chunks.
  • Alternate the meat and the veggies on the skewers and cook for about 12-15 min on BBQ or 25-30 min in the pre-heated oven.
  • Preparing the skewers: 1. If you don't have metal skewers and you are using the wooden ones (oven only) you will have a to soak them in water for a good 20 minutes before so that they don't burn.

8 wooden or bamboo skewers
2 zucchinis, cut into 1-inch slices
2 yellow squash, cut into 1-inch slices
½ pound whole fresh mushrooms
1 red onion, cut into chunks
12 cherry tomatoes
1 fresh pineapple, cut into chunks
1 red bell pepper, cut into chunks
⅓ cup olive oil
1 ½ teaspoons dried basil
¾ teaspoon dried oregano
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Soak skewers in water for 10 to 20 minutes.
  • Preheat grill for medium heat and lightly oil the grate. Alternately thread zucchini slices, yellow squash slices, mushrooms, onion, tomatoes, pineapple, and bell pepper onto the skewers.

1 medium ear fresh or frozen sweet corn, thawed and quartered
1 small zucchini, quartered
1/4 small red onion, halved
4 cherry tomatoes
1/4 teaspoon dried basil
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon dried thyme
1/8 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon pepper
