Provided by Blair Lonergan

Categories     Side Dish

Time 1h10m

Number Of Ingredients 7

2 seedless English cucumbers (or about 3 regular cucumbers), peeled if desired ((about 1.75 lbs. or 6 cups total))
1/2 cup white vinegar or apple cider vinegar
1/2 cup water
2 tablespoons sugar
1 teaspoon salt
1/4 teaspoon pepper
Chopped fresh dill or chopped fresh parsley, to taste

Steps:

  • Slice cucumbers very thinly and place in a large bowl. I like to use a mandoline to keep the slices even and to make the process very fast, but you can just use a knife if you prefer.
  • In a separate small bowl or in a jar, whisk or shake together vinegar, water, sugar, salt, pepper and herbs. Pour over cucumbers. Cover; chill at least one hour or overnight. Drain cucumbers and serve!

Time 1h5m

Yield 4-6 serving(s)

Number Of Ingredients 9

3 large English seedless cucumbers (about 1 pound each, or 3 pounds regular cucumbers)
1 1/2 teaspoons kosher salt, prefer kosher salt
1 medium white onion, sliced thinly into rings
3 tablespoons white vinegar
2 tablespoons cider vinegar
1/4 cup sugar (or splenda)
1/2 teaspoon crazy jane's mixed up salt
1 tablespoon fresh chives, chopped
1 teaspoon red pepper flakes (optional)

Steps:

  • Peel the cucumbers and cut in half lengthwise. Using a small spoon scoop out the seeds and watery center from each half, forming a shallow groove down the center.
  • Using a sharp paring knife, slice the cucumbers crosswise as thinly as possible, ideally about 1/8-inch thick, or use a mandolin to get even, thin slices.
  • Place the cucumbers in a colander and sprinkle with the salt. Using clean hands, toss to combine the cucumbers with the salt and allow to stand, refrigerated, for at least 1 hour and up to 2 hours.
  • Using clean hands, squeeze handfuls of cucumber slices to release any excess liquid and transfer to a medium nonreactive bowl.
  • In another medium a glass bowl, combine white vinegar, cider vinegar, and sugar, and Crazy salt. Stir until the sugar is completely dissolved.
  • Pour the vinegar mixture over the cucumbers, adding onion slices, the chopped chives, and red pepper flakes (if using). Stir to combine, serve, or refrigerate up to 12 hours or overnight and serve cold, with a slotted spoon on the side.
  • Oh boy!

Time 10h5m

Yield 1 cucumber

Number Of Ingredients 5

white vinegar
1 cucumber, sliced
water
1 small sliced onion
1 -2 diced garlic clove

Steps:

  • Put cucumbers, garlic, and onion in a bowl.
  • Pour in vinegar and water until covering cucumbers, at a 3-1 ratio between vinegar and water.
  • (3parts vinegar for every part water).
  • Allow to marinate overnight before serving.

Tips:

  • Choose the right cucumbers: For best results, select firm and unwaxed cucumbers. English, Persian, and Kirby cucumbers are all good choices.
  • Slice the cucumbers thinly: This will help them absorb the vinegar dressing more easily.
  • Use a good quality vinegar: A good balsamic, white wine, or apple cider vinegar will add flavor and acidity to the dressing.
  • Add some herbs and spices: Dill, garlic, and black pepper are classic additions to cucumber vinegar salad. You can also experiment with other herbs and spices, such as basil, oregano, or chili flakes.
  • Let the salad marinate: This will allow the flavors to meld and develop. The longer you marinate the salad, the more flavorful it will be.

Conclusion:

Cucumber slices in vinegar dressing is a simple but delicious salad that is perfect for summer. It is light, refreshing, and flavorful. The cucumbers are crisp and tangy, and the vinegar dressing adds a nice acidity. This salad is also very versatile. You can add different herbs and spices to taste, and you can also use different types of vinegar. Try experimenting with different variations to find your favorite way to make this salad.
