1 (5 ounce) can tuna, drained
½ small onion, minced
pepper to taste
12 slices pickled jalapeno
2 English muffins, split
4 slices Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl, combine tuna, minced onion, and black pepper. Divide mixture onto 4 halves of English Muffins. Arrange 3 slices jalapenos on each muffin half. Top each with a slice of Cheddar cheese. Place on baking sheet.

1/2 cup milk
1 cup peas (I just use a whole can)
2 (6 ounce) cans canned tuna, drained
2 cups cooked pasta, I used egg noodles, but any will do

Steps:

  • MIX soup, milk, peas, tuna and cooked noodles
  • Transfer to a casserole dish.
  • Bake at 400°F for 15 min (may vary a few minutes either way depending on your oven).
  • Let cool 5-10 minutes before serving.

2 (6 ounce) cans tuna
1/4 cup white onion (chopped)
1 cup frozen peas
1 teaspoon garlic powder
salt & pepper
1 cup elbow macaroni
1 tablespoon all-purpose flour or 1 tablespoon gluten-free flour
1 tablespoon butter
1 cup milk (whole works best)
1 cup cheddar cheese or 1 cup colby cheese

Steps:

  • Preheat oven 350°F degrees.
  • While noodles are cooking, melt butter in small sauce pan on medium heat. DO NOT BURN. Add flour and whisk. Add milk. Whisk again.
  • Cook until thick like gravy.
  • Combine remaining ingredients (except cheese) in Pyrex loaf pan. If using metal, grease with butter. Avoid the use of non-stick cookware!
  • Add the white sauce you just created. I like to scrape in as much as possible with a silicone spatula. Add cooked/drained noodles. Stir gently, tends to spill over.
  • Bake for 25 minutes.
  • Top with cheese.
  • Bake for 5 more minutes or until cheese melts.

1 (5 ounce) can tuna, drained and flaked
2 tablespoons mayonnaise
1 pinch salt
1 teaspoon balsamic vinegar
1 teaspoon Dijon mustard
2 slices whole wheat bread
2 teaspoons chopped dill pickle
¼ cup shredded sharp Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Place bread slices in the oven to toast while it preheats, and while you make the tuna salad.
  • In a small bowl, mix together the tuna, mayonnaise, salt, balsamic vinegar, mustard and dill pickle until well blended. Remove bread from the oven, and pile the tuna mixture onto one slice. Sprinkle cheese over the other slice of bread.
  • Bake for 7 minutes in the preheated oven, or until cheese is melted and tuna is heated through. Place the cheese side of the sandwich on top of the tuna side. Cut in half and serve immediately.

TUNA CAKES:
2 can(s) 5oz albacore tuna in water, drained & flaked
1 box 6oz stove top stuffing mix
1 c grated cheddar cheese, sharper the better!
3/4 c water
1/3 c miracle whip (or mayo if you insist)
2 Tbsp sweet pickle relish
HOMEMADE TARTER SAUCE:
1/2 c miracle whip (or mayo if you insist)
1 dash(es) lemon juice
2 Tbsp sweet pickle relish
1 dash(es) dry ground mustard (optional)

Steps:

  • 1. Mix all tuna cake ingredients together in a large bowl. Refrigerate for 10 minutes.
  • 2. While that's cooling, mix together all tarter sauce ingredients in a small bowl.
  • 3. Heat large nonstick pan to medium heat, or your electric skillet to 275 degrees. Add a dash of cooking oil or spray, if desired.
  • 4. Shape mixture into patties, will make 8 good sized patties or 10 medium patties.
  • 5. Cook each patty 3 minutes on each side or until golden brown (see photo).
  • 6. Cool and pat on paper plate or napkin, top with tarter sauce and enjoy!

1 (12 ounce) can albacore tuna in water
1/2 cup mayonnaise (I like light mayo but increase to your liking)
4 slices cheddar cheese
1 teaspoon dill
4 croissant rolls (sourdough or english muffins or any bread you prefer can be used)

Steps:

  • Preheat oven to 350 degrees.
  • Mix the tuna, mayo and dill in a bowl.
  • Cut the Rolls so that they can be used as a sandwich.
  • Scoop some of the tuna mixture on one half and add a slice of cheddar on top of the tuna.
  • Place the both halves of the croissant on a baking dish for all the sandwiches.
  • This will toast the half without any tuna and cheese along with the half with the tuna and cheese.

4 can(s) tuna (4 ounce size) packed in oil or water, your choice. you can use either chunk light or white albacore.
6 large eggs, hard boiled
3 or 4 Tbsp onion, minced (more if you like)
3 or 4 Tbsp sweet pickle relish (more if you like)
3/4 to 1 c mayonnaise or miracle whip (or you may combine them, using about 1/2 cup each)

Steps:

  • 1. Drain tuna well, squeezing out as much oil or water as possible. Put into a medium sized bowl, set aside.
  • 2. Finely chop onion, hard boiled eggs and add to tuna. Add pickle relish and mayonnaise and stir well.
  • 3. Transfer tuna salad to a plastic tub with a lid and place in refrigerator. Allow to cool thoroughly and serve on bread, with crackers or any way that you like.

Tips:
