Time 32m

Yield Makes 25

Number Of Ingredients 5

225g butter, softened
110g caster sugar
275g plain flour
1 tsp cinnamon or other spices (optional)
75g white or milk chocolate chips (optional)

Steps:

  • Heat the oven to 190C/170C fan/gas 5. Cream the butter in a large bowl with a wooden spoon or in a stand mixer until it is soft. Add the sugar and keep beating until the mixture is light and fluffy. Sift in the flour and add the optional ingredients, if you're using them. Bring the mixture together with your hands in a figure-of-eight motion until it forms a dough. You can freeze the dough at this point.
  • Roll the dough into walnut-sized balls and place them slightly apart from each other on a baking sheet (you don't need to butter or line it). Flatten the balls a little with the palm of your hand and bake them in the oven for around 10-12 mins until they are golden brown and slightly firm on top. Leave the cookies on a cooling rack for around 15 mins before serving.

SIMPLE LITTLE COOKIES

Simple Little Cookies image

This is adapted from one of my Great Grandmother's recipes, taken from a notebook of my Grandmothers. It was not the first recipe I tried from it as I thought they looked plain and dull. How wrong! These are tasty and easy to make; ideal for our two-person household since the recipe makes modest quantities.

Time 30m

Yield 16 cookies

Number Of Ingredients 7

1 tablespoon butter
2 tablespoons honey
1 egg
1 teaspoon almond extract
1 cup rolled oats
1/4 cup shredded unsweetened coconut
1/4 cup slivered almonds

Steps:

  • Preheat oven to 350°F.
  • Lightly butter a large cookie sheet, or -- better -- line it with parchment paper.
  • Cream the butter and honey.
  • Beat in the egg and almond extract.
  • Stir in the oat flakes, coconut and almonds.
  • Let the dough sit for 5 minutes before spooning it out.
  • Use a melon-baller or spoon to press the mixture against the side of the bowl, then slide the cookie gently onto the cookie sheet.
  • Bake for 8 to 10 minutes, until just lightly browned around the edges.
  • Remove to a rack to cool.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the cookies will taste. This means using real butter, sugar, and eggs, and avoiding artificial flavors and preservatives.
  • Cream the butter and sugar together until light and fluffy: This will help to incorporate air into the dough, which will make the cookies light and crispy.
  • Chill the dough before baking: This will help to prevent the cookies from spreading too much in the oven.
  • Bake the cookies at the right temperature: The cookies should be baked at a temperature that is high enough to set the edges but low enough to prevent the centers from overcooking.
  • Let the cookies cool completely before storing them: This will help to prevent them from becoming soggy.

Conclusion:

These simple little cookies are a delicious treat that can be enjoyed by people of all ages. They are easy to make and require only a few ingredients. With a little planning, you can have a batch of these cookies ready to enjoy in no time. So next time you're looking for a simple and delicious dessert, give these cookies a try.
