2 tablespoons olive oil
1 tablespoon coarse sea salt
1 pinch Creole seasoning (such as Tony Chachere's®), or to taste

Steps:

  • Preheat convection oven to 400 degrees F (200 degrees C).
  • Rub chicken breasts with olive oil and sprinkle both sides with salt and Creole seasoning. Place chicken in a broiler pan.
  • Bake in the preheated oven for 10 minutes. Flip chicken and cook until no longer pink in the center and the juices run clear, about 15 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

pam cooking spray

Steps:

  • Preheat oven to 350'.
  • Wash chicken fillets and pat dry.
  • In a baking dish, spray Pam well.

2 tablespoons v 8 vegetable juice or 2 tablespoons tomato juice

2 lb assorted chicken pieces, bone in, skin on
1 tsp salt
1/2 tsp ground black pepper
1 Tbsp paprika
3 Tbsp flour (for making gravy, optional)

Steps:

  • 1. Line a 9x13-inch baking pan with aluminum foil leave enough excess off sides to wrap chicken pieces.
  • 2. Place chicken pieces in the pan. Sprinkle generously with salt, pepper and paprika.
  • 3. Wrap the chicken in foil and bake in a 350 degree oven for 1 1/5 hours.
  • 4. Remove chicken from foil, drain off broth into a small sauce pan.
