Yield 6 servings

Number Of Ingredients 10

2 1/2 pounds (12 to 15 count) shrimp
1 tablespoon good olive oil
Kosher salt and freshly ground black pepper
1 cup good mayonnaise
1 tablespoon orange zest (2 oranges)
2 tablespoons freshly squeezed orange juice
1 tablespoon good white wine vinegar
1/4 cup minced fresh dill
2 tablespoons capers, drained
2 tablespoons small-diced red onion

Steps:

  • Preheat the oven to 400 degrees F.
  • Peel and devein the shrimp. Place them on a sheet pan with the olive oil, 1 teaspoon salt and 1/2 teaspoon pepper and toss together. Spread the shrimp on one layer and roast for 6 to 8 minutes, just until pink, firm and cooked through. Allow to cool for 3 minutes.
  • Meanwhile, make the sauce. In a large bowl, whisk together the mayonnaise, orange zest, orange juice, vinegar, 1/2 teaspoon salt, and 1/2 teaspoon pepper. When the shrimp are cool, add them to the sauce and toss. Add the dill, capers, and red onion and toss well. The flavors will improve if you allow the salad to sit at room temperature for 30 minutes. Two 12-ounce jars roasted red peppers
Zest and juice of 1 lemon
5 cloves garlic
1/2 bunch green onions, chopped, plus more for topping
1 tablespoon olive oil, plus for oiling the grill grates
1 teaspoon crushed red pepper

Easy, healthy, and FAST. This is a great weeknight dinner adapted from Woman's Day magazine, although its elegant enough for a dinner party. Just make sure to do your prep work ahead of time, since this comes together quickly. Great served with peas/onions side dish.

2 tablespoons extra virgin olive oil
1 lb medium shrimp, peeled and deveined (can be cooked or uncooked, see steps for instructions for each)

1 teaspoon pepper
1 cup chicken broth (can substitute half with white wine to increase flavor)

  • Add the shrimp mixture, parsley, and cheese (gradually so as not to clump up the cheese). Toss to mix and serve immediately.

SHRIMP, ROASTED RED PEPPER & ANGEL HAIR SALAD

SHRIMP, ROASTED RED PEPPER & ANGEL HAIR SALAD image

Categories     Pepper     Shellfish     No-Cook     Quick & Easy

Yield Serves 2 - 4, depending upon weather and appetite

Number Of Ingredients 10

4 ozs. angel hair pasta
1 TB salt
1 & 1/2 7 oz. jars roasted sweet red peppers, drained & rinsed
1/2 lb. cooked, peeled shrimp
1 garlic clove, minced
2 scallions, thinly sliced
1 TB minced fresh Italian parsley
1/2 lemon, juiced
4 TB extra virgin olive oil, divided
salt/pepper

Steps:

  • 1) Bring a four-quart pot of water to the boil and add 1 TB salt. Break the angel hair pasta into fourths, add to the water, and cook three minutes. (Lower the heat to medium, if needed, to avoid boil-over.) Drain, toss with 1 TB of the olive oil, and set aside to cool. 2) Cut the red peppers lengthwise into 1/4" julienne. Cut the shrimp in half, crosswise. 3) Add the peppers and shrimp to the pasta, along with the garlic, scallions, parsley, lemon juice, and remaining 3 TB olive oil, and mix carefully with a rubber scraper. Season to taste with salt and pepper, and mix again. Serve at room temperature.

Tips:

  • Use fresh and high-quality ingredients: This will make a big difference in the flavor of your salad. Look for plump and juicy shrimp, crisp and colorful roasted red peppers, and fresh herbs.
  • Cook the shrimp properly: Overcooked shrimp will be tough and rubbery. Cook them just until they are opaque and pink, about 2-3 minutes per side.
  • Roast the red peppers yourself: Roasting red peppers at home is easy and gives them a much better flavor than store-bought roasted peppers. Simply halve the peppers, remove the seeds, and toss them with olive oil and salt. Roast them in a 400°F oven for 20-25 minutes, or until they are softened and slightly charred.
  • Make the dressing ahead of time: The dressing for this salad can be made up to 2 days in advance. This will save you time when you're ready to assemble the salad.
  • Use a variety of herbs: Herbs add a lot of flavor to this salad. Use a combination of fresh basil, parsley, and chives for a bright and herbaceous flavor.

Conclusion:

This shrimp roasted red pepper angel hair salad is a delicious and refreshing salad that is perfect for a summer lunch or dinner. It's easy to make and can be tailored to your own preferences. For a spicier salad, add a pinch of red pepper flakes to the dressing. For a more substantial salad, add some cooked quinoa or rice. No matter how you make it, this salad is sure to be a hit!
