I combined several family recipes to create this dish, which I like to serve when we have company. If my husband had his way, I'd make it every night. -Gail Cawsey, Geneseo, Illinois

SHRIMP IN DIJON VINAIGRETTE
THIS IS SO DELICIOUS! One of my top recipes of all time! An easy-to-make appetizer or first course. The flavors will intensify when marinated overnight. Serve in a large bowl lined with lettuce and kale for a fancy look. This is the best shrimp ever. It has become a staple for all "impress the guests" meals. It's easy! This shrimp is a perfect appetizer. I got this from a really fabulous book called Above & Beyond Parsley presented by the Junior League of Kansas City, Missouri.

3-2-1-1 VINAIGRETTE
This is my classic go-to dressing and makes just enough for a nice salad. I love it most with red wine or balsamic vinegar. You can also easily double or triple this recipe if you need a larger amount. Heartier greens like romaine and iceberg need more dressing. More delicate greens like arugula need less.

Tips:
- Use fresh shrimp: Fresh shrimp have a more delicate flavor and texture than frozen shrimp. If you're using frozen shrimp, thaw them properly before cooking.
- Cook the shrimp properly: Shrimp should be cooked until they are pink and opaque, but not overcooked. Overcooked shrimp will be tough and rubbery.
- Make sure the vinaigrette is well-balanced: The vinaigrette should be tangy and flavorful, but not too acidic or oily. Adjust the proportions of vinegar, oil, and Dijon mustard to taste.
- Use fresh herbs: Fresh herbs, such as parsley, chives, and dill, add a bright flavor to the dish. If you don't have fresh herbs on hand, you can use dried herbs, but they will not have as much flavor.
- Serve the shrimp immediately: Shrimp is best served immediately after it is cooked. If you need to make it ahead of time, you can cook the shrimp and then chill it. Bring it to room temperature before serving.
Conclusion:
Shrimp in Dijon Vinaigrette is a light and refreshing dish that is perfect for a summer meal. The shrimp are cooked to perfection and the Dijon vinaigrette adds a tangy and flavorful touch. This dish is sure to be a hit at your next party or gathering.
