1 1/4 lbs peeled and deveined shrimp
12 oz dry angel hair pasta
3 Tbsp olive oil
3 Tbsp unsalted butter
Salt and freshly ground black pepper
3 cloves garlic (, minced)
1 1/2 tsp lemon zest
3 Tbsp fresh lemon juice
3 Tbsp chopped fresh basil
3 Tbsp chopped fresh parsley
1/2 cup finely shredded parmesan

Steps:

  • Cook pasta in salted water according to directions listed on package (keep in mind it will only take about 4 minutes so I recommend adding the pasta to water when you begin cooking the shrimp), reserve 1/2 cup pasta water before draining.
  • In a large skillet, heat olive and butter over medium-high heat. Add shrimp (you can remove tails first if desired), season with salt and pepper and saute 2 minutes, then add garlic and saute until shrimp has cooked through, about 2 minutes longer.
  • Toss drained pasta in with shrimp along with 1/3 cup reserved pasta water, lemon zest and lemon juice. Add more water 1 Tbsp at a time as needed. Toss in 2 Tbsp of each parsley and basil, then sprinkle top with parmesan cheese and remaining 1 Tbsp of each parsley and basil. Serve warm.

1 pound angel hair pasta
2 tablespoons olive oil
1 pound large shrimp, peeled and deveined
4 cloves garlic, minced
1/2 teaspoon red pepper flakes
1 lemon, juiced, plus 1/2 lemon, zested
1/2 cup dry white wine
5 tablespoons butter
1/4 cup chopped parsley leaves

Steps:

  • Add the pasta to a large pot of boiling salted water, over medium heat, and cook until al dente.
  • Meanwhile, heat a large 12-inch skillet over medium-high heat. Add the olive oil. Once shimmering and hot, add the shrimp and saute until just cooked through, about 2 to 3 minutes. Remove to a plate and reserve. Add the garlic and red pepper flakes to the skillet, then saute for until the garlic is fragrant, about 1 minute. Add the lemon juice and white wine and raise the heat to high. Let the liquid reduce for 2 to 3 minutes. Whisk in the butter, add a ladleful of the pasta cooking water and return the shrimp. Remove from the heat.
  • Drain the pasta in a colander, and add it to the skillet along with the chopped parsley and toss. Add the lemon zest and adjust the seasonings with salt and pepper, to taste. Transfer to a serving platter and serve immediately.

1/2 c swiss cheese, shredded
1/3 c crumbled feta cheese
1/4 c fresh basil or 1 tsp. dried basil. fresh is better!
1 tsp dried oregano
1/3 c chopped parsley
1 pkg 9 oz. uncooked fresh angel hair pasta
1 jar(s) 16 oz. mild, thick and chunky salsa (la victorias)
1 lb medium shrimp, peeled and deveined
1/2 c monterey jack cheese, shredded

Steps:

  • 1. With 1 tbsp. butter, grease a 12 x 8 pan.
  • 2. Combine eggs, half and half, yogurt, Swiss cheese, feta cheese, basil, oregano, and parsley in medium bowl, mix well.
  • 3. Spread 1/2 of the pasta on the bottom of prepared pan. Cover with salsa. Add 1/2 of the shrimp. Cover with remaining pasta. Spread egg mixture over pasta and top with remaining shrimp. Sprinkle with Monterey Jack cheese.
