1/4 cup minced shallots
3 tablespoons minced fresh parsley leaves
1 teaspoon minced fresh rosemary leaves
1/4 teaspoon crushed red pepper flakes
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed lemon juice
1 extra-large egg yolk
2/3 cup panko (Japanese dried bread flakes)
Lemon wedges, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Peel, devein, and butterfly the shrimp, leaving the tails on. Place the shrimp in a mixing bowl and toss gently with the olive oil, wine, 2 teaspoons salt, and 1 teaspoon pepper. Allow to sit at room temperature while you make the butter and garlic mixture.
  • In a small bowl, mash the softened butter with the garlic, shallots, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, panko, 1/2 teaspoon salt, and 1/4 teaspoon of pepper until combined.

1 lb large shrimp, peeled but heads & tails left on, black intestines removed
6 medium sized tomatoes, peeled, seeded & pureed
2 Tbsp olive oil with tomatoes
3 Tbsp finely chopped parsely
3 clove garlic, finely chopped
1/3 c olive oil
10 oz feta cheese, crumbled (i usually add more than a cup)
2 Tbsp butter
salt & freshly ground pepper
tabasco sauce (optional)

Steps:

  • 1. Simmer the pureed tomatoes with the 2 Tbsp olive oil for 20 to 25 minutes. Until they become a thick sauce.
  • 2. Pour the sauce in an ovenproof dish. On top place the shrimp. Sprinkle with the parsley, garlic, olive oil and top with Feta cheese. Sprinkle with butter and season with lots of black pepper, little salt and the Tabasco sauce.
  • 3. Bake for 10 minutes, til the Feta cheece melts and bubbles. Serve with plenty of fresh bread to dip into the delicious sauce:) Enjoy!

2 large scallions, sliced
1 link andouille sausage, sliced into half-moons (3 ounces)
