I made up this soup and named it after Shrek because it's chunky, has lots of green and is a little sweet and spicy! Please try to use the fire-roasted tomatoes and fresh spinach, they give such great flavor. They carry the Muir Glen brand at Whole Foods and Wal-Mart Supercenter. I hope you enjoy it!

6 green onions, chopped
2 tablespoons butter
4 cups chicken broth
1 small jalapeno, seeded and chopped
5 carrots, peeled and sliced
5 celery ribs, chopped
1 (25 ounce) jar unsweetened applesauce
1 (15 1/2 ounce) can chickpeas, rinsed and drained
1 cup plain yogurt
1 (14 1/2 ounce) can diced fire-roasted tomatoes, undrained (I like Muir Glen brand)
1 teaspoon fresh lime juice
1/2 teaspoon balsamic vinegar
1 teaspoon Lawry's Seasoned Salt
1/2 teaspoon fresh ginger, peeled & finely minced
4 cups fresh spinach (6 oz bag)

Steps:

  • Melt butter in a large soup pot.
  • Saute onions and jalapeno in butter.
  • Add your broth and turn down to med. heat to a simmer.
  • Add carrots, celery, and applesauce.
  • Simmer for 30 minutes, stirring occasionally, until carrots are tender.
  • In a medium bowl; mix together yogurt, ginger, chickpeas, tomatoes, lime juice, Lawry's, and vinegar. Stir well.
  • After the 30 minutes are up, add your yogurt mix and spinach to the soup. Stir very well and bring back up to a boil.
  • Cook for 10 more minutes, remove from heat and serve.

1/4 cup sliced green onion
3 tablespoons butter
1/4 cup all-purpose flour
1 teaspoon ground mustard
1 pinch cayenne pepper
2 cups half-and-half cream
1 cup chicken broth
2 tablespoons minced fresh parsley
1/8 teaspoon dried thyme
1/8 teaspoon hot pepper sauce
1/8 teaspoon Worcestershire sauce
1-1/4 cups cooked small shrimp, peeled and deveined
1/4 cup dry sherry or additional chicken broth
Salt and pepper to taste

Steps:

  • In a large saucepan, saute onions in butter until tender. Stir in the flour, mustard and cayenne until blended; gradually add cream and broth. 1 tablespoon bacon drippings
3 leeks, thinly sliced (white and pale green parts only)
2 stalks celery, chopped
2 cloves garlic, minced
4 red potatoes, cut into 1-inch pieces
4 cups chicken broth
2 cups water
½ teaspoon dried thyme
½ teaspoon ground paprika
1 pinch cayenne pepper
salt and ground black pepper to taste
3 sprigs fresh thyme
1 cup frozen sweet corn
½ cup milk
18 large tiger shrimp
2 tablespoons cornstarch
1 tablespoon water
1 tablespoon chopped fresh parsley

Steps:

  • Cook and stir bacon in a skillet over medium heat until evenly browned, about 10 minutes. Drain bacon on a paper towel-lined plate, reserving about 1 tablespoon bacon grease in the skillet.

5 quarts water
4 pounds beef shanks
1 (14.5 ounce) can diced fire-roasted tomatoes
¼ large onion, chopped
1 clove garlic, crushed
1 teaspoon salt
1 teaspoon ground black pepper
2 bay leaves
½ pound carrots, peeled and cut into chunks
2 potatoes, cut into chunks
1 green bell pepper
1 sprig parsley

Steps:

  • Combine water and beef in a large pot. Add tomatoes, onion, garlic, salt, black pepper, and bay leaves. Let stand, about 15 minutes.
  • Bring mixture to a boil; reduce heat and simmer, covered, about 1 hour. Add carrots; simmer until tender, about 30 minutes. Add potatoes, green bell pepper, and parsley.
