Time 55m

Yield 8

Number Of Ingredients 11

¼ cup water
1 (1 ounce) packet taco seasoning mix
2 (8 ounce) cans tomato sauce
2 teaspoons white distilled vinegar
2 teaspoons minced garlic
2 teaspoons ground oregano
1 teaspoon ground cumin
½ teaspoon white sugar
2 tablespoons olive oil
2 pounds skinless, boneless chicken breasts
8 taco shells, warmed

Steps:

  • Mix water and taco seasoning in a large bowl. Add tomato sauce, vinegar, garlic, oregano, cumin, and sugar; mix well.
  • Heat oil in a large skillet over medium-high heat. Add chicken and cook until golden brown, about 5 minutes per side. Add tomato sauce mixture and bring to a boil. Reduce heat to medium-low, cover, and simmer until chicken is no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Remove chicken breasts from the pan and shred meat with 2 forks when cool enough to handle. Return shredded chicken to the pan with the tomato sauce. Cook and stir until chicken is coated with sauce and sauce reduces a bit, about 5 minutes.

SHREDDED CHICKEN FOR ENCHILADAS, TOSTADAS, TACOS...

Shredded Chicken for Enchiladas, Tostadas, Tacos... image

This is an authentic filling used for Mexican dishes such as: enchiladas, tostadas and tacos. You can easily double the recipe, as it freezes well. I always have some on hand in the freezer. Use this in place of plain shredded chicken; and it will kick an average Mexican recipe up a notch (IMHO). COOK'S NOTES: 1 whole frying chicken, giblets and excess fat removed, can be used instead of boneless chicken breasts.

Categories     Chicken

Time 45m

Yield 10 serving(s)

Number Of Ingredients 17

4 boneless chicken breast halves
1/2 medium onion, sliced
2 garlic cloves, smashed
1 tablespoon salt
water
2 tablespoons butter
1 garlic clove, minced
1/2 medium onion, chopped
1 medium tomatoes, seeded and chopped
1/2 green bell pepper, chopped
1 teaspoon fresh coarse ground black pepper
1 teaspoon marjoram
1/4 cup cilantro, chopped (or to taste)
1 1/2 teaspoons ground cumin

1/2 cup chicken broth (reserved)

Steps:

  • Place first four ingredients in a pot. Add just enough water to cover the chicken.
  • Bring to a slow boil, cover, lower heat to maintain a simmer and cook until done, about 20 - 25 minutes. If using a whole chicken; cook approximately 50 - 60 minutes.

  • In a large pan, melt butter over low heat.
  • Add the remaining ingredients listed, except tomato sauce, salt, and broth.
  • Sauté until soft, about 10 minutes.
  • Stir in shredded chicken and briefly sauté.

SHREDDED CHICKEN FOR TACOS

Shredded Chicken for Tacos image

Just about any food that fits on a tortilla has found its way into some type of taco, but this shredded chicken remains an easy weeknight staple. Poached in a simple broth of onion, garlic and spices, the chicken stays moist and is infused with flavor. You could opt for boneless, skinless chicken thighs or breasts; add some fresh cilantro or sliced jalapeño to the liquid; use a glug of light beer, if you have some on hand. Shred the cooked chicken into bite-size pieces and it's ready to be tucked into a taco with little more than some pico de gallo. You could freeze the resulting stock for future use or even boil it until thickened to drizzle it over the meat. The rules here are far from ironclad, but the fail-proof method guarantees an easy building block for tacos and beyond.

CHICKEN TINGA (SHREDDED CHICKEN) FOR TACOS OR TOSTADAS

Chicken Tinga (Shredded chicken) for tacos or tostadas image

Number Of Ingredients 1

1 batch 2-lbs boneless, skinless chicken thighs; Salt and pepper; 2 tablespoons vegetable oil; 1 onion; 3 garlic cloves; 1 teaspoon ground cumin; 1/4 teaspoon ground cinnamon; 14.5-oz can fire-roasted diced tomatoes; 1/2 cup chicken broth; 2 tablespoons minced canned chipotle chile in adobo sauce plus 2 teaspoons adobo sauce; 1/2 teaspoon brown sugar; 1 teaspoon grated lime zest plus 2 tablespoons juice

Steps:

  • Pat chicken thighs dry using paper towels, then season with salt and pepper. Add 1 tablespoon vegetable oil to a large Dutch oven, and set over medium-high burner. Pre-heat until the oil begins to shimmer. Brown half the chicken; 3 to 4 minutes per side. Remove browned chicken to a large plate. Repeat the browning process with rest of the chicken (no need to add more oil). Meanwhile, cut onion in half and slice thin. Peel 3 garlic cloves. Turn down burner to medium, pre-heat 1 more tablespoon vegetable oil until shimmering. Add onion slices and cook for 5 minutes until browned; stir often. Add garlic, cumin, and cinnamon and cook for 1 minute. Add can of diced tomatoes, chicken broth, chipotle and adobo sauce, and sugar and bring to boil, scraping up any browned bits. Return the partially-cooked chicken to pot, reduce burner to medium-low. Cover, and allow to simmer for 15 to 20 minutes until the internal temperature of the chicken reaches 195 degrees; flip chicken after 5 minutes. Remove chicken to cutting board Empty the cooking liquid into a blender and process until for 15 to 30 seconds until smooth, returning sauce to the pot. Once the chicken is cool enough to handle, use two forks to shred chicken into bite sized pieces. Return shredded chicken to pot with sauce. Cook over medium heat, stirring frequently, until sauce is thickened and clings to chicken, about 10 minutes. Meanwhile, warm your tortillas and prepare the avocado by cutting in half, discarding the pit, and dicing into 1/2-inch pieces. Mince scallions and cilantro as garnish. After 10 minutes add lime zest and juice to pot, and season to taste with salt and pepper. Prepare the tacos by spooning chicken into center of a warm tortilla, adding diced avocado, Cotija, scallions, cilantro, and squeezing lime wedges as desired.

2 cans (8 oz. each) GOYA® Tomato Sauce
2 tsp. GOYA® White Distilled Vinegar
2 tsp. GOYA® Minced Garlic
3½ tsp. ancho chili powder
1 tsp. GOYA® Ground Cumin
2 tsp. GOYA® Oregano Leaf
½ tsp. sugar
GOYA® Adobo with Pepper, to taste
2 tbsp. GOYA® Extra Virgin Olive Oil
2 lbs. bone-in, skin-on chicken breasts
12 GOYA® Corn Tortillas, heated according to package instructions
For the garnish:
Chopped avocados (optional)
Coarsely chopped fresh cilantro (optional)
Shredded lettuce (optional)
Lime wedges (optional)
Finely chopped white onions (optional)
Chopped tomatoes (optional)
GOYA® Hot Sauce (optional)

Steps:

  • 1. In medium bowl, mix together tomato sauce, vinegar, garlic, chili powder, cumin, oregano, and sugar. Season with adobo; set aside.
  • 2. Heat oil in large skillet over medium-high heat. Season chicken with adobo. Cook chicken, turning once, until light golden brown on both sides, about 5 minutes. Add reserved tomato sauce mixture to pan; bring to a boil (be careful, the tomato sauce can splatter). Lower heat to medium low. Simmer, covered, flipping once, until chicken is cooked through (thermometer will register 165°F when inserted into thickest part of breast), about 20 minutes.
  • 3. Transfer chicken to cutting board; reserve sauce in pan. Remove and discard bones and skin. Using two forks, shred chicken breast. Transfer chicken to skillet with sauce, mixing to combine; continue to cook until sauce reduces and blends into chicken, and mixture begins to caramelize, about 10 minutes more.
  • 4. To serve, spoon shredded chicken onto tortillas. Garnish with desired toppings.

Tips:

  • Choose the right chicken: Boneless, skinless chicken breasts or thighs are the best choices for shredded chicken tacos. Dark meat chicken (thighs) will yield more flavorful shredded chicken, but white meat chicken (breasts) is a healthier option.
  • Cook the chicken properly: The chicken should be cooked until it reaches an internal temperature of 165°F (74°C) to ensure that it is safe to eat. You can cook the chicken in a slow cooker, Instant Pot, or on the stovetop.
  • Shred the chicken: Once the chicken is cooked, shred it using two forks or a meat shredder. Be careful not to over-shred the chicken, as this will make it dry.
  • Season the chicken: Once the chicken is shredded, season it with your favorite taco seasoning. You can use a store-bought taco seasoning mix or make your own using chili powder, cumin, paprika, garlic powder, and onion powder.
  • Choose the right tortillas: Corn tortillas or flour tortillas can be used for shredded chicken tacos. If you are using corn tortillas, be sure to warm them up before filling them.
  • Load up the tacos: In addition to the shredded chicken, you can add a variety of other toppings to your tacos, such as salsa, guacamole, sour cream, cheese, lettuce, and tomatoes.

Conclusion:

Shredded chicken tacos are a delicious and easy-to-make meal that can be enjoyed by people of all ages. By following these tips, you can make sure that your shredded chicken tacos are flavorful, juicy, and satisfying. So next time you're looking for a quick and easy meal, give shredded chicken tacos a try!
