2 lbs fresh shiitake mushrooms
2 fresh garlic cloves, peeled and finely diced
2 fresh shallots, peeled and finely diced
2 ounces unsalted butter, cubed
sea salt
fresh ground black pepper
extra virgin olive oil
1 ounce chicken stock or 1 ounce fish stock
1 tablespoon aged sherry wine vinegar
3 tablespoons extra virgin olive oil
salt & pepper
diced tomato
baby mixed salad green

Steps:

  • Remove the stems from the mushrooms and discard. Slice the caps into 1/8 inch slices. Shiitakes are generally very clean and may need only a slight brushing off.
  • Heat a heavy pan till very hot, cast iron if possible and add 1/4 inch of the olive oil. Add the mushrooms and cook for 15 seconds. Salt and pepper to taste while they are cooking. Add the garlic and shallots but keep stirring the mushroom so that the garlic and shallots do not color or burn.
  • After 1 minute add the stock and then the cold butter. Swirl the pan to allow the liquid to absorb the butter. This will thicken the sauce.
  • Pour vinegar in a mixing bowl, add salt and pepper. Whisk in olive oil and adjust to taste. Toss babymixedlettuces in vinaigrette, arrange on plate. Place on top of mixed lettuces a portion of shiitakes. Arrange the diced tomatoes around the shiitake mushrooms.

2 1/2 cups cubed tomatoes, fresh or canned
1/4 cup tomato paste
1 tablespoon balsamic vinegar
1/3 cup red-wine vinegar
2 1/2 teaspoons dried thyme
1/2 teaspoon herbes de Provence, optional
3 tablespoons sugar
Salt to taste if desired
Freshly ground pepper to taste
1/4 teaspoon Tabasco sauce
1 cup plus 2 tablespoons olive oil, approximately
2 cups thinly sliced onions, loosely packed
2 1/4 teaspoons finely minced garlic
1 1/4 pounds shiitake mushrooms
1/4 pound vermicelli or capellini
2 tablespoons finely chopped scallions or chives
1/2 tablespoon sesame oil
1 teaspoon soy sauce
1/4 teaspoon grated fresh ginger
1/8 teaspoon five-spice powder

Steps:

  • Combine tomatoes, tomato paste, balsamic vinegar, red-wine vinegar, thyme, herbes de Provence, sugar, salt, pepper and Tabasco sauce in a saucepan. Bring to a boil.
  • Meanwhile, heat 1/4 cup olive oil in a heavy skillet and add onions. Cook, stirring, until wilted. Add to tomato mixture, and cook, stirring, about 30 minutes or until sauce is quite thick. Add 2 teaspoons garlic and stir.
  • Cut mushrooms into thin crosswise slices. There should be about 10 cups.
  • Heat 3/4 cup olive oil in a large, heavy skillet. Add half the mushrooms, salt and pepper. Cook, stirring often, until mushrooms are crisp, about 4 to 5 minutes.
  • Drain mushrooms, but reserve oil. Return oil to skillet, and add remaining mushrooms, salt and pepper to taste. Add more oil if necessary. Cook until mushrooms are crisp. Drain mushrooms.
  • Add mushrooms to tomato sauce, and stir to blend. Let stand until at room temperature.
  • Bring a large quantity of water to a boil and add salt. Add vermicelli or capellini, and cook about 3 minutes or to the desired degree of doneness. Do not overcook.
  • Drain vermicelli or capellini, and run under cold water until chilled. Drain thoroughly and pour into a bowl. Add remaining olive oil, scallions or chives, sesame oil, soy sauce, remaining 1/4 teaspoon garlic, ginger and five-spice powder. Toss to blend well. Serve.

To me, they are invaluable, and prepared this simple, traditional way, they are spectacular. If you do happen to have some chanterelle, morel, or other wild mushrooms on hand, this is an excellent way to cook them.

1/4 cup extra virgin olive oil
1 pound shiitake mushrooms, trimmed of their stems (which can be reserved for stock but are too tough to eat) and sliced
Salt and freshly ground black pepper
1 teaspoon minced garlic or 2 tablespoons chopped shallot
Chopped fresh parsley for garnish (optional)

Steps:

  • Put the olive oil in a large skillet over medium heat. When it is hot, add the mushrooms, then some salt and pepper. Cook, stirring occasionally, until tender, 10 to 15 minutes.
  • Add the garlic or shallot and turn the heat to high. Cook, stirring occasionally, until the mushrooms begin to brown and become crisp at the edges. Taste and adjust the seasoning if necessary, garnish with the parsley if you like, and serve hot or at room temperature.
